Why stainless steel goes dull - and why it keeps coming back

A cloudy, dull stainless surface is a film, not a flaw in the steel - and there is usually more than one. Here is what dulls it and why polishing alone never lasts.

Why stainless steel goes dull - and keeps coming back

Stainless steel loses its shine when a film builds on the surface, and there is rarely just one film. Baked-on grease, hard-water limescale and heat tint each dull the metal in a different way and each needs a different treatment. Polishing lifts the gleam for a day, but if the film and its cause are left in place the dullness returns - and abrasive polishing can make it permanent.

What is actually dulling the surface

Stainless steel is only "stainless" because of a microscopically thin passive layer of chromium oxide that seals the metal. Keep that layer clean and intact and the steel stays bright. Dulling almost always means something has settled on top of it - and telling the three culprits apart is the whole job.

  • Baked grease film. Airborne cookline grease lands on warm steel, then heat from the range and the salamander bakes it into a dull, tacky-then-hard layer. It reads as a cloudy sheen that a wipe smears rather than removes.
  • Limescale. In hard-water areas, water left to dry on a splashback or sink leaves calcium carbonate - a chalky, cloudy white film. No amount of scrubbing shifts it because it is a mineral deposit, not a soil; it needs a mild acid to dissolve.
  • Heat tint. Overheating a dry pan or surface thickens the chromium oxide unevenly, throwing blue, gold or brown patches. It looks like staining but it is oxidation of the metal itself, not dirt sitting on top.

Because the three have different causes, one cleaning method cannot fix all of them - and reaching for an abrasive pad on the wrong one does harm.

The instinct is to attack a dull patch with a scouring pad and elbow grease. On brushed stainless that is exactly how you wound the passive layer: circular scrubbing and harsh abrasives leave fine swirl scratches that trap light, hold grease more readily and can even start surface corrosion. The panel comes up shinier for an hour, then dulls faster than before.

A correct deep clean reads the surface first: degrease the baked film, dissolve limescale with a suitable mild acid, address heat tint appropriately, and always work with the grain and the gentlest method that works. The point is not shine for the photo - it is a surface that stays hygienic and bright because the film is gone, not buried under scratches.

Why the shine does not last

Recurring dullness is a maintenance signal, not a cosmetic annoyance. It usually points to grease escaping the extract and landing on surfaces, water left to dry rather than buffed off, or pans run too hot and dry. Polishing the surface is necessary but it is not sufficient: unless each film is removed by the right method and its source is brought under control, the same dull sheen is back within days - and every abrasive pass makes the steel harder to keep bright.

Why does my stainless steel look cloudy even after cleaning?

A cloudy sheen is usually a film on the surface rather than damage to the steel - most often baked-on grease or, in hard-water areas, a chalky limescale deposit. A general wipe smears it; the grease needs a proper degrease and the limescale needs a mild acid to dissolve. If it comes back within days, grease is still landing on the surface from the cookline, which is the real thing to address.

Is heat tint on stainless steel a problem?

Heat tint - the blue, gold or brown patches from overheating - is oxidation of the metal, not rust and not a food-safety fault in itself. It is a sign a surface or pan has been run too hot and dry. It can be treated, but the more useful response is to look at why the steel is overheating, because repeated heat tint also stresses the protective layer over time.

Will scrubbing harder bring the shine back?

Usually the opposite. Abrasive pads and circular scrubbing scratch the passive layer on brushed stainless, leaving swirl marks that dull faster and hold grease more easily. Steel should be worked along its grain with the gentlest method that lifts the film. Aggressive polishing buys an hour of shine and costs you a surface that dulls quicker every time.

Why does the dullness keep coming back after a deep clean?

Because the shine and the cause are two different things. If grease is still escaping the extract onto your surfaces, or water is left to dry rather than buffed off, the film simply rebuilds. A deep clean removes what is there; keeping it bright means controlling the source - which is often a sign the extraction or the daily routine needs attention.

Can you restore stainless that has already been scratched dull?

Light swirl marks and embedded grease can often be improved a great deal by degreasing and refinishing along the grain. Deep scoring from heavy abrasives is harder to reverse, which is exactly why the right method matters from the start.
