The detail
A water-wash canopy has spray nozzles built into the plenum behind the filters. On a cycle - typically at the end of service - the system sprays hot water and detergent across the filters and plenum surfaces, flushing the loosened grease down to a drain. Done nightly, it keeps the front of the system far cleaner than manual filter washing usually manages, and removes a daily chore from the kitchen.
Its reach, though, stops at the canopy. The nozzles wash the filters and plenum; they do not extend into the ductwork that runs through the building, and they do not clean the extract fan at the far end. Grease still travels past the washed plenum into the duct and onto the fan, just as it does in a conventional system, and those parts see no benefit from the wash cycle.
So the ductwork and fan remain a manual TR19 Grease job. They still accumulate grease, still need cleaning through access panels, and still need thickness measurement and a post-clean verification report against the same 200 and 50-micron limits. A water-wash canopy changes the front-of-system routine; it does not remove the duct and fan from the cleaning and compliance scope.
The wash system itself also needs maintaining. Nozzles block, detergent dosing drifts, the hot-water supply and drainage can fail, and a wash cycle that is not working properly leaves the filters and plenum dirty while appearing to run. Confirming the cycle actually cleans - rather than assuming it does - is part of looking after a water-wash canopy.
What it means for you
The value of a water-wash canopy is real but bounded. It keeps the filters and plenum consistently clean and takes a laborious daily task off the kitchen, which slows how fast grease loads the system from the front. The mistake is to read that convenience as whole-system cleaning and let the duct and fan drift out of scope.
The duct and fan still need their own schedule. Because the wash keeps the front clean, it is easy to assume the whole system is handled and quietly stretch the duct-cleaning interval past what is safe. The duct should still be inspected and measured on its own merits, and cleaned when the deposits - not the tidy canopy - say it is due.
Used well, a water-wash canopy is a genuine help sitting alongside, not replacing, the periodic TR19 clean. The wash handles the front; the specialist handles the duct and fan and provides the verification. Kept in that division of labour, the technology earns its place; blurred into a false sense of full cleaning, it hides the same duct grease every other system carries.
