Remove the oxygen and you remove a key defence against the most serious bacteria. Here are the rules that keep vacuum packing and sous vide safe - the 10-day rule, C. botulinum above 3C, what it takes to extend shelf life, and where your HACCP plan comes in.
Vacuum packing and sous vide have moved out of fine dining and into cafes, gastropubs, butchers and central production kitchens, because they extend shelf life and deliver consistency. But both do something dangerous by design: they remove oxygen. Take away the air and you take away one of the main things that keeps some of the most serious bacteria in check. Done with documented controls these techniques are safe and routine. Done casually, a normal prep job becomes a genuine public-health risk - and this is one area where the rules are stricter than most operators realise.
The main hazard in vacuum-packed and modified-atmosphere-packed chilled food is a bacterium called non-proteolytic Clostridium botulinum. It grows and produces a powerful toxin without oxygen, and it can do so at chilled temperatures - from around 3C upwards. That single fact reshapes how you have to think about a sealed pouch: ordinary fridge temperatures slow most bacteria to a crawl, but they do not stop this one, and the toxin it produces is not something you can see, smell or taste.
The core rule
The working rule in the UK is that vacuum-packed and MAP chilled foods should be given a shelf life of no more than 10 days at 3C to 8C, unless you have put additional controls in place to prevent that bacterium growing across the whole shelf life.
To extend beyond 10 days you need at least one recognised controlling factor operating throughout the food: a heat treatment of 90C for 10 minutes or a validated equivalent, a pH of 5.0 or below throughout, a salt level above 3.5% in the aqueous phase, a water activity below 0.97, or a validated combination of factors. These are a higher bar than an ordinary sous vide cook, and demonstrating you meet them - by challenge testing, predictive modelling or other validation - is your responsibility, not something a supplier can assume for you.
Two different cooks
It is easy to conflate two things that do different jobs. A sous vide cook to a core of 70C for two minutes, or a validated equivalent, controls vegetative bacteria such as salmonella and E. coli - the pathogens most sous vide cooking is aimed at. It does not deal with the spores of non-proteolytic C. botulinum. That is why the shelf-life controls above are a separate, higher hurdle: cooking your product to a safe eating temperature does not, on its own, license a long chilled shelf life in a sealed pouch.
There is one carve-out worth knowing. The C. botulinum shelf-life guidance does not apply to vacuum-packed chilled fresh beef, lamb and pork with no added ingredients and no processing beyond cutting, packing and chilling - for those, a shelf life of up to 13 days may be applied without further botulinum validation. Add a marinade, a cure or any other ingredient and you are back under the standard rule. Whatever you make, the time and temperature at every step needs recording, which is where robust temperature control records become part of the safety case rather than mere housekeeping.
Doing it compliantly
A common question is whether you need permission to vacuum pack. You do not need formal approval to start, but you remain legally responsible for setting and validating a safe shelf life and for demonstrating safety to your competent authority. The Food Standards Agency advises businesses with vacuum-packing or MAP queries to seek the advice of their local enforcement team - usually the environmental health department, or the FSA if the establishment is FSA-approved - and especially before extending any shelf life beyond 10 days. Treat that conversation as part of the process, not an admission of doubt.
Two practical controls sit alongside the science. First, equipment: a vacuum packer, slicer or mincer must not be used for both raw and ready-to-eat food, because of the cross-contamination risk, unless it is fully dismantled and disinfected between uses. Second, documentation: because you are relying on defined batches and validated limits, the whole activity must be built into your HACCP-based food safety management system, with the controlling factors, monitoring and batch definition written down. If that plan is not something your team actually follows, it will not protect anyone - the same principle that underpins a HACCP plan you will actually use.
