Add a pizza oven or fryer to a taproom and you have a full commercial kitchen inside a brewery. The food, gas and extraction rules that come with it.
A taproom that starts serving food crosses a line it rarely notices at the time. The pizza oven or fryer that turns a drinks room into a night out also turns the business into a food operator with a full set of obligations, and it plants a hard-working commercial kitchen inside a building designed around fermentation tanks. Running that kitchen compliantly is a different discipline from brewing good beer.
The moment food is prepared for customers, the taproom becomes a food business in law. That means registering with the local authority at least 28 days before starting, running a food-safety management system based on HACCP, providing allergen information and carrying a food hygiene rating like any cafe or restaurant. Breweries are often confident about their production hygiene and duty compliance, then find the kitchen side is a separate world with its own rules, inspectors and paperwork.
Gas, heat and air
Taproom food tends to be exactly the kind that loads extraction hard: wood-fired or deck pizza ovens, deep-fat fryers, chargrills and loaded street-food plates. All of it throws off heat, steam and grease-laden vapour that a bare industrial unit was never set up to handle, so a proper canopy, grease filters and ducted extraction to the outside are not optional. Guidance points to high-efficiency baffle filters capturing in the region of ninety per cent of grease, with balanced make-up air so the room does not go into negative pressure and pull fumes the wrong way.
Where the cooking is gas-fired, the rules get firmer. Under the Gas Safety (Installation and Use) Regulations, a commercial gas kitchen needs either effective extraction or a ventilation interlock - to the recognised BS 6173 standard - that shuts the gas off if the airflow fails, guarding against a build-up of combustion products. Gas work must be done by a Gas Safe registered engineer and appliances checked annually. Design guidance such as DW/172 and Approved Document F sits behind all of it, and an environmental health officer will expect the commissioning and maintenance records to prove it.
None of this is unique to breweries, but the setting adds wrinkles. A kitchen sharing a building with live brewing has to keep its food areas properly separated from the production side, and duct routing in a tall industrial shell often has to climb to roof height and away from neighbours to avoid odour and noise complaints. The food kitchen and the brewery are two regulated operations under one roof, and each has to be right on its own terms.
A common route in
Many taproom kitchens do not start from scratch; they are a residency or a street-food trader moving indoors, which is a transition with its own pitfalls. A gazebo griddle that worked at markets is a different proposition once it is a permanent, ducted installation under a canopy, and the food operator has to level up accordingly. It mirrors the wider challenge of scaling a street-food brand into fixed premises, where the cooking that made the name now has to meet the full weight of premises, gas and extraction rules rather than the lighter touch of a temporary pitch.
The risk that grows quietly
Extraction is where the food side and fire safety meet, and it is the part most likely to be neglected in a business that thinks of itself as a brewery. Fryers and pizza ovens lay down grease inside canopies, filters and ductwork every service, and that grease is fuel; left to build, it turns a duct into a flue for a fire that can spread through the whole structure. Keeping it under control is a matter of a proper canopy cleaning and fire risk assessment and a duct-cleaning schedule set by how hard the kitchen runs, cleaned and certificated to the TR19 Grease standard. For a taproom whose value is tied up in a single characterful building - and often the beer stored in it - a clean, certificated extraction system is some of the cheapest insurance it can buy.
