The everyday injuries - a slip on a greasy floor, a trip over a delivery, a burn from hot oil - feel like part of the job. Almost all are preventable, and most yield to design rather than to care alone.
The dramatic kitchen accident, the fire or the serious scald, gets the attention, but the injuries that quietly cost a kitchen the most are the ordinary ones: a slip on a greasy floor, a trip over a delivery left in a walkway, a burn from a splash of hot oil during a rush. They are so routine that they can feel like part of the job, yet almost all of them are preventable, and together they drive a surprising amount of pain, absence and cost.
The national picture is stark. The Health and Safety Executive reports that slips and trips are the single most common cause of major injury in UK workplaces, and in catering the occupations most affected are kitchen assistants, chefs and waiting staff. More broadly, accommodation and food services recorded the highest rate of non-fatal workplace injury of any sector in 2024/25, higher even than construction, with around 64,000 self-reported injuries. Among incidents serious enough to report under RIDDOR, a slip, trip or fall on the same level is consistently the most common of all.
Burns and scalds sit close behind, and they are painful, sometimes permanent, and largely avoidable. Hot oil, steam and boiling liquids cause most of them; industry figures suggest around 60 per cent of the severe burns treated in NHS burn units are scalds or contact with hot surfaces, both everyday features of a working kitchen. Treated as inevitable, these injuries keep happening. Treated as a design problem, most of them stop.
Design the hazards out
Most kitchen slips happen on floors made treacherous by the work itself, water from cleaning, grease carried on the air and settling underfoot, and spilled food. The fixes are unglamorous and effective: clean spills the moment they happen, fix leaks and taps that drip, degrease floors properly rather than smearing the film around, and fit slip-resistant flooring and footwear as a baseline rather than an afterthought. Emptying a deep-fat fryer, a notorious flashpoint for both slips and burns, deserves its own safe method rather than being improvised at the end of a shift.
Trips are a housekeeping problem more than anything, and they yield to housekeeping discipline: clear walkways, storage for deliveries and belongings so nothing lives on the floor, and cables routed out of the path of a hurrying cook. Burns respond to equally concrete habits, splashguards and lids on hot liquids, sleeves down and heat-resistant gloves for oven and fryer work, and a simple rule that hot pans are flagged and never left where someone will grab them bare-handed. If a burn does happen, the correct first aid is to cool it under running water for around twenty minutes, not to reach for ice or creams.
Behind the individual controls sits a simple truth: a clean, well-ordered kitchen is a safer one. Grease that is allowed to build does not stay on the canopy; it migrates onto floors and surfaces and turns them slick, so the same poor cleaning that raises fire risk also raises slip risk. Keeping floors, surfaces and extraction genuinely clean is not a separate task from safety, it is a large part of how the everyday injuries are designed out, shift after shift.
The layout does half the work
Vigilance matters, but a kitchen that is laid out badly will keep producing the same injuries however careful the team, because it forces hurried movement through wet and hot zones. Designing those hazards out, the approach taken in kitchen ergonomics, designing out slips, strains and burns, means arranging stations, flow and storage so that people are not carrying hot pans across slippery floors or reaching awkwardly past a fryer. A layout that keeps the wet away from the walkway and the hot away from the crush removes whole categories of accident before anyone has to remember to be careful, which is far more reliable than care alone.
