Kitchen ergonomics: designing out slips, strains and burns

The injuries that empty a rota are the predictable ones - and most are designed in. HSE data on what actually hurts kitchen staff, and the layout decisions that take the hazards out.

Why do the same injuries keep happening in good kitchens?

Slips and trips are the single most common cause of major injury in UK workplaces, and in catering the people most affected are kitchen assistants, chefs and waiting staff. In 2023/24, accommodation and food service employers filed 4,233 RIDDOR reports - up 13% in two years - and a slip, trip or fall on the same level was the top cause, ahead of lifting and being struck by objects.

Most kitchens respond with signage, toolbox talks and a reminder to be careful. HSE's hierarchy of controls says the opposite: the fixes that work remove the hazard rather than warn about it. A wet floor sign is close to the bottom of that hierarchy. Flooring that grips when greasy, a layout that keeps hot pans away from walkways, and shelving at heights that spare backs sit near the top - which is why ergonomics is a design job before it is a training job.

Slips

What actually stops a kitchen slipping?

Water, oil and food debris hitting a smooth floor is the classic mechanism, and one HSE investigation found the slip risk on unsuitable flooring was unacceptably high even under light contamination - the injured worker in that case spent eleven days in a high-dependency unit. Getting contamination off the floor at source beats cleaning it up afterwards: drip trays under leak points, splash guards on sinks and fryers, extraction that removes airborne grease before it settles, and taps and hoses that are fixed rather than tolerated.

Where the floor itself is the problem, resurfacing or slip-resistant footwear pays back quickly. One council catering service that spent 18,000 pounds on non-slip overshoes went from four reportable slip injuries in nine months to zero in the six months after - and halved its minor slips at the same time. That is a rounding error against the 800 million pounds a year HSE estimates slips, trips and falls cost society.

Settled grease is a slip hazard at floor level and a fire hazard at duct level. A scheduled commercial kitchen deep clean takes both out of circulation - we degrease the floor, the kit and the surfaces the mop never reaches.

Strains

Where do the strains come from - and what moves them?

Back pain and other musculoskeletal disorders are the most common occupational ill health in catering, and they rarely arrive as one dramatic lift. They accumulate: sacks stored at floor level, stock pots carried across the kitchen because the tap is in the wrong place, plating done on benches set for someone a foot taller, and hours of standing on hard floors. In 2023/24 there were 471 reported injuries from handling, lifting and carrying in the sector - the second-biggest category after slips.

The design answers are unglamorous and effective. Store the heavy items between knee and shoulder height and leave the floor and top shelves for the light ones. Put water where the pots are filled and used, or use a hose. Break bulk deliveries at the door rather than carrying them whole. Wheel what can be wheeled. Set bench heights for the tasks done at them - and where a kitchen serves staff of very different heights, vary the benches rather than the people. The same layout thinking that cuts service times usually cuts carrying distances too, because both are about putting tasks next to their inputs.

Burns

Which burn risks can a layout remove?

Around 60% of severe burns treated in NHS burn units are scalds or contact burns - the two mechanisms a commercial kitchen produces all day. Training covers carrying technique and dry cloths; design decides how often the dangerous moments happen at all. A fryer beside a walkway creates a collision risk every service. A pot wash on the far side of the cookline means hot pans travel. Ovens that open into a corridor put a door of hot metal into moving traffic.

  • Separate hot from through-traffic. Fryers, solid tops and combi doors should not open onto or sit beside the main walking line - the same zoning logic that separates raw from ready-to-eat separates hot from hurried.
  • Shorten the hot journeys. Drain points near fryers for oil changes, pot wash near the wet cooking, hot holding beside the pass - every metre a full stock pot travels is exposure.
  • Take the heat out of the room. A kitchen running hot tires people, and tired people slip, drop and grab. Extraction working at its design airflow is an ergonomic control as much as a comfort - we set out the costs of losing it in the hidden cost of a hot, poorly ventilated kitchen.
  • Design the fryer routine. Filtering and oil changes at the coolest point of the day, with the right vessel and a clear route, remove the single scariest regular task in most kitchens.

The sector now records the highest rate of non-fatal workplace injury of any UK industry - around 64,000 self-reported injuries in 2024/25, more than construction. Each one carries cover costs, claims exposure and lost experience off the rota. Against that, the design fixes are mostly one-off: a floor surface, a shelf plan, a relocated drain, a layout that was going to be decided anyway. If a refit or new fit-out is on the horizon, the cheapest moment to design out slips, strains and burns is before the services go in - planning the layout around extraction and gas is where that conversation usually starts.

A sign is a temporary measure while the hazard is dealt with, not the control itself. If floors are routinely wet or greasy in service, the assessment should be asking why, and fixing that.
