Equipment that earns its place

A high-street microwave dropped into a working kitchen will be dead within months, usually at the worst possible moment on a Friday night.

Commercial units are a different animal. They run on heavier internals, cool themselves properly, take Gastronorm pans, and are built to be hammered hundreds of times a day without complaint. Seven steps to the right unit

  1. Match the duty rating to your covers. Manufacturers band commercial microwaves as light, medium or heavy duty, and the difference is real engineering, not marketing. Light-duty models are rated for roughly up to 50 uses a day, medium-duty for around 100 to 150, and heavy-duty for 200-plus - so count your true daily reheats and defrosts honestly, then buy the band above it.
  2. Get the power output right. A heavy-duty, correctly powered, cleanable microwave is a genuine workhorse, but it only reaches its warranty age if the kitchen around it stays clean and its cooling air stays clear.
