How to Choose a Combi Oven for a High-Volume Site

Choosing a combi oven for a busy production kitchen is a different job from picking one for a small pub servery. Here is how to match capacity, steam, utilities and reliability to real throughput.

At scale, a combi oven stops being a clever cooking gadget and becomes the beating heart of your production line. The question is no longer whether steam and convection in one box is useful - it plainly is - but whether the machine in front of you can hold its output through a full banqueting service, a double lunch sitting or a central production run, day after day, without falling behind or breaking down. Get the sizing, the steam system and the utilities right and the oven disappears into the background. Get them wrong and it becomes the bottleneck every service is forced to work around.

How much oven do you actually need?

Capacity is measured in grids - the number of Gastronorm shelves the cavity holds - and this is where high-volume sites tend to under-buy. A 6-grid model takes six GN 1/1 trays and copes with roughly 30 to 100 covers a service, which is fine for a cafe or a small pub kitchen but nowhere near a production site. A 10-grid steps up to ten GN 1/1 trays and around 80 to 150 covers, and a 20-grid holds twenty GN 1/1 trays and produces something in the region of 150 to 300 covers. Once you are consistently cooking 300 to 500 covers - contract catering, banqueting, or a central production kitchen feeding satellite sites - you are into 20-grid GN 2/1 territory, where each shelf is twice the footprint again.

The mistake is sizing for your average service rather than your peak. If your busiest sitting is a 400-cover function, that is the number the oven has to clear inside the plating window, not your quiet Tuesday. Two well-chosen 10-grid ovens often beat a single 20-grid for a high-volume site, because you keep cooking when one is being cleaned or serviced, and you can run different products at different settings side by side.

Boiler or boilerless - which holds up at volume?

Every combi makes steam, but how it makes it matters enormously once the oven is working hard. A boiler model keeps a heated reservoir of water ready, so it can pour out consistent, high-density steam for long stretches - exactly what sustained banqueting and heavy steaming demand. A boilerless, or injection, oven sprays water onto a hot surface to generate steam on demand. It preheats faster, uses less water when it sits idle and has no boiler to descale, which is attractive - but at full tilt, across a long service, an injection system can struggle to keep steam volume up the way a dedicated boiler does.

For a genuine high-volume site the honest answer is usually a boiler model, accepting that the boiler is the part most exposed to scale and therefore the part your maintenance regime has to protect. If your steam demand is heavy but intermittent - lots of short bursts rather than one long banqueting push - a modern injection oven may serve you well and simplify the plumbing. Whichever route you take, the cavity, seals, fans and steam system all take a battering at scale, so build the machine into your planned cleaning schedule from day one rather than waiting for performance to drop.

Have you sized the utilities behind it?

A high-volume combi is only as good as the services feeding it, and this is where projects quietly overrun. A 10-grid electric oven typically draws around 18.9 kW and a 20-grid around 37.2 kW - both need a three-phase supply, not a domestic-style single-phase circuit, and that often means new cabling and a spare way in the board. Gas versions exist and pull the load off your electrical supply, but they carry their own flue and interlock requirements. Confirm the incoming supply before you fall in love with a model, because retro-fitting three-phase power is neither quick nor cheap.

Water is the other half of the story, and the one that decides how long the oven lives. Scale build-up on the steam generator is the single most common cause of premature combi failure, and most manufacturers will decline a warranty claim if the machine has been run on untreated hard water. A softener fitted upstream of the oven is the baseline, not an optional extra; where the incoming water is high in dissolved solids you may need reverse osmosis on top. It is worth testing your supply for hardness, chlorides and total dissolved solids before you specify, so the treatment is sized to the water you actually have. Add a proper drain able to take hot waste and you have the three connections - power, treated water and drainage - that quietly govern the whole installation.

Will it keep up shift after shift?

Reliability at scale is bought at the point of purchase, not repaired into existence later. The single biggest lever is automatic cleaning. High-end ovens run their own cleaning and descaling programmes - a quick interim clean in around a quarter of an hour, or a full unattended cycle overnight - which keeps the cavity, seals and steam system in condition without tying up a member of staff every night. On a high-volume site that runs long hours, an oven that cleans and descales itself will outlast one that relies on hand-scrubbing, and it protects the warranty at the same time. Well-maintained combis routinely give fifteen years or more of service, with long spare-parts support behind them.

Think too about how food moves through the machine at peak. Roll-in trolley and rack systems let you load a whole banqueting run in one go, roll it straight into a blast chiller or a hot hold, and regenerate to order - which is the backbone of most large-scale catering. For most busy production kitchens two 10-grid ovens are the safer choice. You keep cooking when one unit is being cleaned or serviced, you can run different products at different settings at the same time, and you have built-in redundancy for peak service. A single 20-grid gives you the most capacity in the least floor space, so it suits sites with a single large banqueting push rather than continuous varied output.

Do we really need a water softener on a high-volume combi oven?

Yes. Scale from hard water building up on the steam generator is the most common reason combis fail early, and most manufacturers will refuse a warranty claim on a machine run without treatment.
