The detail

Two systems, one grease path

A commercial kitchen carries two lines of fire defence over the same cookline. The wet chemical suppression system - usually an Ansul R-102 or equivalent - sits in the canopy ready to knock down a fire on the appliances. The extraction system above it pulls grease-laden air up through the filters, plenum and duct to the fan. Both are anchored to the same canopy, and both are defeated by the same thing: accumulated grease.

Grease is the fuel. TR19 Grease, whose full title is Fire Risk Management of Grease Accumulation within Kitchen Extraction Systems, treats deposits in the extract as a fire risk to be measured and removed - a mean average target around 200 microns, roughly half a business card. The cleaning programme exists to keep that fuel load down through the whole system, not just the visible canopy.

The suppression system is the active side of the same problem. Its detection links, nozzles and agent all sit in the greasiest air in the building. When they are clean they work as designed; when they are coated, detection is slow and the spray is misdirected. So the clean that protects the duct also protects the device meant to stop the fire in the first place.

Gas interlocks tie the two together mechanically. Gas only flows to the burners while the extraction fan proves airflow, so a fan derated by grease can trip the gas. The same grease that raises your fire risk also destabilises the safety system governing the fuel supply. Cleaning is what keeps all three - extract, suppression and interlock - inside their design envelope.

Treat the canopy clean, the suppression service and the gas safety check as one programme rather than three unrelated visits. Each depends on the others being current, and a gap in one shows up as a weakness in another - a slow link, a tripping interlock, a duct carrying more fuel than it should.

The evidence stacks the same way. A TR19 post-clean report and a suppression Certificate of Conformance together describe a system that is demonstrably maintained. Insurers and fire risk assessors read them as a pair, because between them they cover both the fuel and the response.

Frequently asked questions

Are extraction cleaning and fire suppression the same job?

No. They are separate specialisms - cleaning is done to TR19 Grease by a duct hygiene firm, suppression is serviced to BAFE SP206 by a fire systems engineer - but they protect the same cookline and each depends on the other being maintained.

Does cleaning the canopy service the Ansul system too?

No. A duct hygiene clean removes grease from the canopy, filters and duct; it does not test detection links, nozzles or the agent charge. Those need a separate six-monthly suppression service, though a clean canopy makes that service more reliable.

Which comes first, the clean or the suppression service?

Where both are due together, cleaning first is sensible so the suppression engineer works on and certifies a degreased canopy. The two visits can be sequenced within a single planned window.

Can grease really stop a suppression system working?

Yes. Grease insulates detection links so they release late, and it blocks or misdirects nozzle spray. The build-up that cleaning removes is the same build-up that degrades the device meant to control a fire.

How does a gas interlock fit in?

The interlock only lets gas flow while the extraction fan proves airflow. Grease that derates the fan can trip the interlock and cut the gas - linking your cleaning schedule directly to whether the burners will light.
