How Baffle Filters Work and Why They Need Degreasing

A baffle filter is clever but not self-cleaning. The detail

The mechanism, and its limit

Inside a baffle filter, grease-laden air is forced through a series of tight, interlocking steel channels that make it change direction repeatedly. Airborne grease droplets are heavier than air and cannot turn as sharply, so they strike the smooth vanes and are thrown out of the stream. The captured grease runs down the vanes under gravity into a collection channel or tray, which is why a baffle is often described as self-draining.

That draining is real but partial. The thinnest, stickiest film clings to the vanes rather than running off, and over a busy service it warms, oxidises and bakes into a hard varnish. Each layer makes the surface rougher, so the next shift's grease clings more readily still. What starts as a wipeable film becomes a baked deposit that no amount of draining will shift on its own.

As that deposit builds, the filter stops doing its job. The channels narrow, the air speeds up and squeezes through the gaps rather than turning cleanly, and the grease that should have been captured is carried straight past into the plenum and duct. A blinded baffle also raises the resistance the fan fights, cutting extraction at the cooktop and leaving the kitchen hotter and smokier.

Degreasing is what resets it. A hot soak in a proper degreaser, or a cycle through a utensil washer, softens and lifts the baked film so the vanes are smooth and free-draining again. Because baffles are stainless steel they take this repeatedly without harm, which is a large part of why they last for years where a mesh filter would have corroded or deformed.

The practical rule is that a baffle needs regular degreasing, not just a rinse. A quick wipe removes the loose grease but leaves the baked film that does the damage, so filters should be soaked or washed often enough that deposits never get the chance to harden. In a busy kitchen that means a proper soak on a routine, not only when the filters look bad.

Draining only works if the drainage path is clear. The collection channel or tray beneath the filters, and the gutter it feeds, must be emptied and cleaned too, or the grease the baffle sheds simply pools and overflows back into the canopy. A well-maintained baffle and a blocked gutter still make a mess, so the two go together.

Look after the filters and you protect everything behind them. Grease stopped and drained at the baffle is grease that never reaches the plenum, the duct or the fan, where removing it is slow and costly. The baffle is the cheapest, easiest place in the system to control grease - but only while it is kept clean enough to do the job it was designed for.
