Kitchen heat is a genuine health hazard with a clear clinical progression, not just part of the job. Spotting heat exhaustion before it becomes heat stroke - and engineering the heat down so it rarely appears - is what keeps a line safe.
Heat in a kitchen is easy to wave away as part of the job, the price of working over a hot stove. That framing is dangerous, because heat is a genuine health hazard with a clear clinical progression, not merely a comfort issue. When the body can no longer shed the heat it is gaining, it moves through heat stress into heat exhaustion, and if nothing changes, into heat stroke, which is a medical emergency that can be fatal. A busy kitchen supplies every ingredient for that progression: radiant heat from equipment, humidity, hard physical work, and clothing that traps warmth.
The law treats this as a risk to be assessed like any other. Under the Management Regulations an employer must assess the risks to workers' health, and that expressly includes the risk from hot conditions and heatwaves. The Workplace Regulations require a reasonable temperature indoors. Neither sets a magic number, which means the responsibility sits with the operator to recognise when the kitchen is becoming dangerous and to act, rather than waiting for a threshold that does not exist.
The good news is that heat illness is both preventable and, if you know the signs, catchable early. The kitchens that handle it well do two things: they watch their people for the first indications of trouble, and they engineer the environment so those indications rarely appear in the first place.
Know the warning signs
Spotting heat illness early depends on everyone knowing what it looks like. Heat exhaustion comes first, and its signs are heavy sweating, dizziness, headache, nausea, cramps, fast breathing and skin that is often pale and clammy. Someone in this state needs to stop, move somewhere cool, loosen clothing and rehydrate, and they usually recover within half an hour. The danger is missing it, because if it tips over into heat stroke the picture changes: confusion, a very high temperature, skin that may be hot and dry or still sweating, and collapse. Heat stroke is a medical emergency and needs an ambulance without delay.
Because a person deep in heat stress may not judge their own condition well, a simple buddy system works better than relying on people to speak up. Colleagues watch each other for confusion, a change in the way someone is working, clammy skin or breathlessness at rest, and raise it early. Managers can also read the patterns over a season, looking at absence, near misses and complaints during hot spells to see where the kitchen is quietly overheating its people.
Watching for the signs is the safety net, but the real work is making sure they seldom appear. That means controlling the environment: removing heat at source, moving and replacing the air, keeping people hydrated and rested, and reducing the physical load where you can. For higher-risk spells the HSE points to measuring heat stress directly, using a wet-bulb globe temperature index that captures humidity and radiant heat rather than air temperature alone.
The environment does the work
You cannot rest-break your way out of a kitchen that is fundamentally too hot; the environment has to be brought under control, and ventilation is the primary tool for doing it. In a kitchen the extraction system is the largest single influence on how hot the room gets, so a system that is working properly is not a comfort nicety but the main line of defence against heat illness on the line.

There is a catch that trips up many hot kitchens: pulling air out is only half the system. If large volumes of air are extracted without an equal, cooler supply coming back in, the kitchen goes into a struggle that leaves it stuffy and starved of fresh air, and the extraction itself becomes less effective.
