What an EHO checks behind and under your kitchen equipment

The short answer

An EHO looks where the dirt hides

Surfaces you wipe every shift are rarely where marks are lost. Environmental Health Officers are trained to check the places routine cleaning skips - behind, under, above and inside equipment - because that is where soil, grease and pests actually build up.

Under the Food Hygiene Rating Scheme, the cleanliness and condition of your premises is one of three scored areas. An officer assesses it on what they can see and reach during an unannounced visit, and they know the kitchen's blind spots better than most operators do. Here is where they look, and why.

Behind and under fixed equipment

Ranges, fryers, griddles, fridges and prep benches are heavy, so they rarely get moved - and the gap behind and the floor beneath them collect grease, food debris and standing soil. Officers will look down the sides, behind, and underneath wherever access allows. Wall-to-equipment junctions, the splash zone behind fryers and ranges, and equipment feet and castors are classic mark-losers because grease bakes on and becomes a cleaning and pest issue at once.

  • Behind the cookline. Grease and carbon on the wall behind ranges and fryers, where heat bakes it hard.
  • Under and between units. Debris and grease in the floor gaps that a mop never reaches.
  • Fridge and freezer seals and coils. Soiled gaskets and dust-clogged condenser coils - a hygiene and a performance problem.
  • Shelving, racking and legs. The undersides and uprights, not just the working surface.

Up high and inside

High level, extraction and the awkward interiors

High-level surfaces - tops of units, ledges, pipework, ceiling fixtures and lighting diffusers - gather grease-laden dust that drifts down onto food areas. Officers notice it because it signals the cleaning routine stops at eye level. The extraction system is firmly on their radar too: grease-coated canopy filters, residue around the fan housing, or grease weeping from duct joints are immediate red flags, and they need no special equipment to spot them. An officer can also ask to see your TR19 grease certificate as documentary proof the system has been cleaned to standard and at the right frequency - an absent or out-of-date certificate gets noted.

Then there are the interiors: the inside of ovens and combi units, extraction plenums, ice machines, drains and gulleys, and waste areas. These are exactly the zones a deep clean is designed to reach and a daily clean is not. Getting them right is less about effort on the day and more about a periodic deep clean that resets the parts of the kitchen an inspector knows to check.

Frequently asked questions

Do officers really move equipment to look behind it?

They check behind and underneath wherever access reasonably allows - down the sides of the cookline, under benches, behind fridges. Heavy fixed equipment may not be moved, but visible grease and debris in the gaps still counts against you, which is why a periodic deep clean that reaches those zones matters.

Is the extraction system part of a hygiene inspection?

Yes. Ventilation sits within the structure and cleanliness assessment. Grease-coated filters, residue around the fan, or grease dripping from duct joints are immediate red flags, and an officer can ask to see your TR19 grease cleaning certificate as proof of maintenance.

What about fridge seals and coils?

Soiled door gaskets and dust-clogged condenser coils are common findings. They are both a hygiene issue and a performance one, since a dirty seal or coil makes the unit work harder and hold temperature less reliably.

Why does high-level cleaning matter so much?

Grease-laden dust on tops of units, ledges, pipework and light fittings drifts down onto food areas, and it signals to an officer that the cleaning routine stops at eye level. High-level surfaces are a frequent and avoidable mark-loser.
