Choosing Wash-Hand Basins and Sinks for Compliance

The basins and sinks in your kitchen are one of the first things an inspector checks. Here is how to choose and lay them out so they pass on hygiene, materials and separation.

What does UK law actually require for basins and sinks?

Get your wash-hand basins and sinks right and half of a hygiene inspection takes care of itself - get them wrong and an inspector will notice within minutes of walking through the door.

The rules that govern washing facilities in a commercial kitchen sit in Regulation (EC) No 852/2004 on the hygiene of foodstuffs, which was retained in domestic law after the UK left the EU and is now enforced here by the Food Standards Agency and your local authority environmental health officers. It is not a long or complicated piece of law, but two parts of it shape almost every decision you make about basins and sinks.

Annex II, Chapter I requires an adequate number of washbasins, suitably located and designated for cleaning hands, with hot and cold - or appropriately mixed - running water, materials for cleaning hands and hygienic drying. The same Annex adds that, where necessary, the facilities for washing food must be separate from the hand-washing facility. Chapter II then calls for adequate provision for washing and, where necessary, disinfecting working utensils and equipment, made of corrosion-resistant materials that are easy to clean, with a sufficient supply of hot and cold water.

The thread running through all of it is separation. Hands, food and equipment each need their own dedicated washing point so that one job cannot contaminate another. Choosing the right basins and sinks is really about designing that separation into the room from the start.

How many sinks do you need, and which jobs must stay separate?

There is no single national number written into the law - the requirement is that facilities are "adequate" for the food you handle and the way you work - but environmental health officers apply a consistent set of expectations, and most well-run kitchens end up with the same core layout.

At minimum you should plan for three distinct functions, each with its own facility:

  • A dedicated wash-hand basin used only for washing hands. Staff must never wash their hands in a food sink or a pot-wash sink, so this basin needs to be positioned close to where open food is handled and kept clear of clutter.
  • A sink for washing food - preparing salads, rinsing vegetables and defrosting - kept separate from equipment washing so that soil and detergent residues never reach ingredients.
  • A sink for cleaning equipment and utensils, ideally a twin or double-bowl unit so you can wash in one bowl and rinse in the other. Where there is no dishwasher, that double bowl is effectively expected rather than optional.

Larger or busier kitchens usually go further - a separate basin near the entrance, a dedicated sink for raw meat and poultry, and a mechanical dishwasher for crockery - but the principle does not change. If a single sink is being asked to do two of these jobs, an inspector will treat it as a cross-contamination risk. It is far cheaper to design the extra sink in now than to retrofit plumbing later after a poor rating.

What materials, taps and water make a basin compliant?

Once you have the right number of basins in the right places, the specification of each unit is what carries it over the line. Three details matter most: the material, the tap and the water supply.

Material

Surfaces in a food area must be smooth, non-absorbent, corrosion-resistant and easy to clean and disinfect. In practice that means stainless steel - grade 304, the familiar 18/8 alloy with roughly 18% chromium and 8% nickel, is the workhorse for basins, sinks and splashbacks because it shrugs off both food acids and cleaning chemicals. Coved corners and welded seams matter too: a lip or crevice that traps grease and water is exactly where inspectors and swab tests find problems.

Taps

A hand-wash basin defeats its own purpose if you have to grip a dirty tap to turn the water off after washing. This is why wrist-operated lever taps, knee or foot-operated valves, and infrared sensor taps are strongly preferred for dedicated hand basins - they let staff finish washing without re-contaminating clean hands. Alongside the tap you need a wall-mounted liquid soap dispenser and a hygienic drying method, which almost always means disposable paper towels rather than a shared cloth.

Water

Every basin and sink must have an adequate supply of wholesome, potable running water. Hand basins need hot and cold or a blended warm supply that staff will actually use - water too hot to bear encourages people to skip washing. For equipment washing, hot water is essential to shift grease and help disinfection, and where a dishwasher handles final cleaning its rinse cycle should reach around 82°C to sanitise effectively. Keep the pipework and traps accessible so they can be cleaned, because a neglected basin waste is a common source of drain flies and odours.

None of these features is exotic or expensive on its own. The mistake we see is treating a hand basin as an afterthought - a small domestic sink squeezed into a corner with a single quarter-turn tap and no soap - when a purpose-made stainless unit costs little more and passes without question.

How do you keep your basins and sinks inspection-ready?

Choosing compliant fittings is the start; keeping them that way is what protects your Food Hygiene Rating over time. Inspectors judge the standard on the day they visit, so the goal is a kitchen where every washing point works, is stocked and is being used correctly all of the time - not just when someone is expected.

Build a few simple habits around your washing facilities and they will look after themselves:

  • Check every hand basin at the start of each shift for hot water, soap and paper towels, and log it as part of your daily opening checks.
  • Keep hand basins clear - the moment one becomes a place to stack pans or thaw stock, it stops being a hand basin in an inspector's eyes.
  • Deep clean sinks, taps, waste traps and the surrounding wall surfaces on a regular schedule, and keep a record so you can show the routine exists.
  • Repair dripping taps, blocked wastes and failed sensor valves promptly, because a facility that does not work is treated the same as one that is missing.
