A surface can look spotless and still carry allergen protein from the last job. Allergen residue is invisible, it clings to shared boards, blades, mixer bowls and cloths, and a fast wipe often smears it rather than removes it. Removing it is a physical process - detergent, friction and clean water in the right order - not a visual check.

What the label does not cover

Clean-looking is not allergen-clean

Since Natasha's Law came into force in October 2021, pre-packed for direct sale food must carry a full ingredients list with the fourteen major allergens emphasised. That label tells a customer what is in the recipe. What it cannot tell them is what is on the surface - the sesame, milk, mustard or gluten left on a board, a blade or a worktop by the job before theirs. That is cross-contact, and it is invisible.

Allergen residue is protein, not grease or grime, and it does not announce itself. A trace far too small to see can still trigger a serious reaction. The everyday routes are mundane: a chopping board used for a wheat roll then a "gluten-free" salad; a can opener, a mixer bowl or a knife shared across dishes; and above all the cloth - a wet cloth wiped across one station and then another carries protein with it, spreading the very thing it is meant to remove.

Why a wipe is not enough

Removing protein takes friction, not a spray

You cannot sanitise your way out of allergen residue. A sanitiser is designed to kill microorganisms; it is not designed to lift protein off a surface, and a quick spray-and-wipe can leave allergen behind while looking and smelling clean. Protein comes off the way grease does - with detergent, physical agitation and a rinse with clean water, done in a deliberate sequence so you are not just moving it around.

That is why allergen control is built on dedicated or fully-cleaned-down equipment, separate or colour-coded boards and utensils, single-use or laundered cloths, and a cleaning method proven to remove residue rather than assumed to. The FSA refreshed its guidance on allergen information for non-prepacked food in March 2025, and the direction is clear: written information and documented controls, not a look and a wipe.

The limit

Where a deep clean earns its place

A visually clean surface is necessary but it is not sufficient. Invisible allergen protein persists on shared surfaces and equipment - blades, boards, bowls, can openers, the backs of prep benches and the cloths themselves - long after a wipe makes them look ready. A periodic deep clean resets those shared touch-points properly, gets into the equipment and gaps a daily wipe never reaches, and gives you a defensible baseline for the allergen controls you run on top of it every day.

Can you see allergen residue on a surface?

Generally not. Allergen residue is protein and it leaves no visible mark, so a surface can look and feel perfectly clean and still carry a trace large enough to cause a reaction. That is the core problem with a visual check - clean-looking is not the same as allergen-clean, which is why the cleaning process itself has to be trusted rather than the appearance.

Why is wiping with a cloth a problem for allergens?

A wet cloth wiped across one station and then another carries protein with it, so it can spread allergen between surfaces rather than remove it. That is one of the most common routes of cross-contact in a busy kitchen. Single-use or laundered, station-specific cloths and a proper detergent-and-rinse method break that chain in a way a shared damp cloth never can.

Does sanitiser remove allergens?
