The short answer
A kitchen smell is a clue with an address. Rotten eggs point to the grease trap, a sour drain smell to biofilm in the pipes, a sudden sewer waft to a dried-out water seal, stale cooked grease to the extract, and a musty note to mould. Naming the smell tells you where the hidden source is - and where a wipe-down will never reach.
Reading the smell
A smell that survives a full clean is being produced somewhere the clean did not reach. The useful skill is matching the character of the odour to the likely source, so you investigate the right place instead of scrubbing surfaces that were never the cause.
Why the nose beats the eye
Most of these sources are invisible from where you stand. The trap is under the floor or outside, the biofilm is inside the pipe, the dried seal is down a gully, the grease is up in the canopy and duct, the mould is behind a seal or above a ceiling tile. You will not see any of them on a worktop, which is why a kitchen can look immaculate and still smell wrong. The odour is the only part of the source that travels to you.
Reading the smell narrows the search to a system - drainage, grease trap, extract or a damp seam - so a deep clean goes straight to the source instead of chasing the symptom around the room. That is the difference between masking a smell with more cleaning product and actually removing what is making it.
The limit
Identifying the odour is necessary but it is not sufficient. Each smell is a hidden source a wipe-down cannot touch - a trap, a drain, a dried seal, the extract, a damp seam - and the smell keeps returning until that specific source is deep-cleaned or the seal is restored. The nose does the diagnosis; reaching the source is the cure. Air freshener and extra surface cleaning only cover the message the smell is trying to send.
Questions
That sulfur, rotten-egg character is typically hydrogen sulfide from fats, oils and grease decomposing in the grease trap, usually alongside methane and ammonia. It gets stronger the fuller the trap is and the longer it is left between services. It is a reliable sign the trap is overdue for emptying and cleaning rather than anything on your work surfaces.
Grease coats the inside of the drains and pipes, food debris sticks to it, and bacteria feed on the layer, forming a biofilm that gives off a sour, sulfurous smell that drifts back up the plughole. Because the source is inside the pipe, pouring cleaner down the surface does not shift the ingrained film - the drain needs cleaning back to a clean wall for the smell to go.
That is almost always a dried-out trap. The gully has a water seal that blocks sewer gas, and if it is rarely used the water evaporates and the gas comes straight in. It is a missing barrier rather than a dirt problem, so running water into the gully to refill the seal often clears it immediately. If it persists, the trap or pipework needs a closer look.
A stale, cooked-grease smell that lingers in the air - the odour of old frying - even after surfaces are clean usually points to the canopy, filters and extract. Grease held in the system keeps re-releasing that smell whenever the fan runs. It often shows up alongside a greasy film on nearby surfaces, and it is a prompt to have the extract surveyed and cleaned.
The smell narrows it down a great deal - rotten egg to the trap, sour to the drains, sewer to a dried seal, stale grease to the extract, musty to mould - which tells us which system to investigate. From there a survey confirms the source and its extent. So the smell is an excellent diagnostic starting point, but the fix comes from reaching and deep-cleaning the source it points to.
