Why Is My Canopy Clean but the System Still Smells?

A clean canopy only covers the first few feet of your extract - the smell usually comes from grease trapped deep in the ductwork, riser and fan. Here is how to find it and clear it.

Why does a spotless canopy not mean a clean system?

A gleaming canopy is the part everyone can see - and that is exactly the problem, because the smell almost never starts there.

When your team wipes down the canopy, degreases the baffle filters and polishes the stainless steel at the end of service, they are cleaning the first few feet of a system that can run for many metres. The canopy is the mouth of the extract. Behind it sits the plenum, the horizontal runs, the vertical riser, the extract fan and often a long roof-level discharge. Grease-laden air travels through every one of those parts, and it does not stop depositing grease just because the visible surfaces look clean.

Here is what actually happens during cooking. Frying, grilling and chargrilling throw tiny droplets of vaporised fat into the airstream. As that warm, humid air is drawn up and away from the cooking line it cools, and the grease condenses onto whatever surface it meets - the inside of the ductwork, the fan blades, the bends where airflow slows. The canopy and filters catch a share of it, but a large fraction sails straight past into the ducting where nobody looks. Over weeks and months it builds into a soft, sticky film and then a hard, carbonised crust.

That hidden layer is the source of the smell. So a canopy that passes the eye test can sit on top of a duct system that is heavily fouled, holding onto months of trapped grease, moisture and the odours that come with them. Cleaning what you can see and reach is good daily housekeeping, but it is not the same as cleaning the system - and your nose is telling you the difference.

Where is the smell actually coming from?

Once you accept that the canopy is only the entrance, the likely sources become much easier to picture. A persistent smell in a visibly clean kitchen usually traces back to one or more of these hidden areas.

  • The horizontal duct runs. Grease settles heaviest where air slows and changes direction. Long flat runs and bends collect a thick coating that daily cleaning never reaches.
  • The vertical riser. As warm air rises and cools, condensed grease runs and pools. Risers are awkward to access and are frequently the dirtiest single part of a system.
  • The extract fan. Fan blades and the housing cake up with grease, which bakes on with the motor's heat and gives off a strong smell every time the fan runs.
  • Trapped moisture and bacteria. Steam from boiling and washing raises humidity in the duct, and that damp, greasy environment lets bacteria and mould take hold. A musty or sour note usually points here rather than to fresh grease.

There is also a chemistry reason the smell keeps coming back. Old grease and spent frying oil break down into compounds such as butyric acid, which give off a sharp, rancid odour. Those are gaseous - a wiped surface or a mechanical filter cannot trap them. And every time the system warms up for the next service, the heat reactivates the deposits and releases the smell all over again. That is why a kitchen can smell fine cold first thing in the morning and turn sour within an hour of the burners going on.

None of these areas are reachable with a cloth and a spray bottle. They sit behind access panels, up risers and inside fan housings, which is precisely why the smell survives even the most diligent surface routine.

How do you prove the whole system is clean, not just the canopy?

In the UK the benchmark for this is TR19® Grease, the specification published by the Building Engineering Services Association (BESA) for fire risk management of kitchen extract systems. It moves the conversation away from "does it look clean" and onto measured evidence, which is exactly what you need when the visible surfaces lie.

The standard sets grease deposition thresholds measured in microns - thousandths of a millimetre. As a guide, a mean average of 200 microns across the system is the point at which a full clean is triggered, localised areas of 500 microns or more need spot cleaning, and 1,000 microns or more is treated as a high fire risk needing immediate attention. To put 200 microns in perspective, that is roughly half the thickness of a business card, so the trigger point is far thinner than most people expect.

Reputable cleaners measure this rather than guess. A Wet Film Thickness Test (WFTT) gauges soft, greasy deposits, while a Deposit Thickness Test (DTT) measures harder, carbonised build-up. To reach the ducting they fit or use access panels - TR19 Grease expects these at strategic points, generally no more than around two metres apart, so the whole run can be inspected and cleaned rather than just blown through.

The proof comes in the paperwork. After the work you should receive a Post-Clean Verification Report showing before-and-after grease measurements taken from the same positions, photographs, a schematic marking every access and test point, notes on any areas that could not be reached, and the chemicals used. A properly finished system should read under 50 microns as an average. That report is also what your insurer increasingly wants to see - many policies now expect TR19-compliant cleaning, and a fire in a fouled system with no evidence of maintenance can put a claim at risk. If your last "clean" produced no measurements and no photographs of the duct interior, there is a good chance the smell you can still detect never left.

What should you do to get rid of the smell for good?

The lasting fix is to have the full extract system cleaned to standard, on a schedule that matches how hard you work it - not simply to clean the canopy harder. TR19 Grease sets risk-based frequencies by how many hours a day the system runs, and matching your cleaning to your usage is what stops deposits building back to the point where they smell.

  • Heavy use - roughly 12 to 16 hours a day of cooking - points to a full clean about every 3 months.
  • Moderate use - around 6 to 12 hours a day - typically every 6 months.
  • Light use - about 2 to 6 hours a day - at least every 12 months.

Between those deep cleans, keep up the daily canopy and filter routine, keep the filters in good condition so they catch more grease before it reaches the duct, and ask for a report every time so you can watch the grease readings rather than wait for your nose to warn you. Heavy chargrilling, wok cooking and solid-fuel work throw off far more grease, so if that is your menu you should expect to sit at the frequent end of the range.
