Kitchen extraction & ventilation
A kitchen with no windows and no easy path to the roof has to do everything by mechanical means. When the mechanical system is the only system, getting it right is a matter of safety, not just comfort.
A kitchen with no windows and no outside wall cannot fling a door open to clear the air. A basement kitchen cannot even rely on a straightforward path to the roof. These enclosed spaces have to do everything a kitchen's ventilation normally does, capture heat, grease and fumes and replace the air, entirely by mechanical means, and that makes getting the design right a matter of safety rather than just comfort.
Most kitchens have some natural help: a window that opens, a door to a yard, a short run to a roof discharge. A basement or windowless kitchen has none of that to fall back on. Every cubic metre of air the extraction canopy pulls out has to be mechanically replaced, and the fumes and heat have to be driven out through ductwork that may travel a long, awkward route up through the building to a safe discharge point. When the mechanical system is the only system, its design and upkeep carry the whole load, and any weakness shows up quickly as an unbearable, and potentially dangerous, kitchen.
The core principle
The governing rule of kitchen ventilation is simple: air that is extracted has to be replaced. In the UK the recognised specification is BESA's DW172, the specification for kitchen ventilation systems, which sets out how canopies, ductwork, extract rates and, crucially, make-up air should be designed. Make-up air, sometimes called replacement air, is fresh air deliberately introduced to balance what the canopy exhausts. A typical design introduces most of the extracted volume back into the kitchen as make-up air, often up to around 85 per cent of the extract, with the small remainder allowed to infiltrate from adjacent spaces to keep the kitchen slightly negative so odours do not drift into dining areas.
Skip or under-size the make-up air and the kitchen goes strongly negative: it becomes a sealed box that the extract fan is trying to empty faster than air can get in. The results are immediate and unpleasant. Doors become hard to open, cold uncontrolled draughts whistle in through every gap, and the extract fan, starved of air to pull against, cannot achieve the capture velocity it needs, so smoke and grease spill into the kitchen instead of being drawn away. In a basement with gas appliances, a strongly negative kitchen can even interfere with appliance flues, which moves the problem from discomfort into genuine danger.
Below ground, make-up air brings a second challenge: temperature. Fresh air pulled straight in from outside in winter is cold, and dumping it into a kitchen creates a draught that hits the chef every time the system runs. Well-designed systems temper the incoming air, warming it with a heater battery or introducing it through a plenum built into the canopy so it arrives conditioned rather than as a blast. In a basement, where the make-up air route is itself constrained, getting this right takes real design attention rather than an off-the-shelf fan.
The building fights back
Basement and windowless kitchens are often found in older or listed buildings, or in dense city sites where the obvious solutions are not available. Roof penetration may be forbidden, ceiling heights may be tight, and the extract duct may have to travel a long horizontal run with multiple bends before it can rise to a safe discharge. Every metre of duct and every bend adds resistance the fan has to overcome, and a system sized on the canopy alone, ignoring that resistance, will fall short of the airflow it needs. These are exactly the conditions where a poorly conceived system quietly under-performs, and where the heat and grease that should be leaving the building instead build up inside it, feeding the very fouling that a system in a high-load environment like a gym or leisure centre also has to fight.
Keeping it alive
Because an enclosed kitchen has no margin, keeping its ductwork clean and clear is not optional. Grease building up in a long, hard-to-reach extract run narrows the duct, raises resistance and drops the airflow exactly where the kitchen can least afford it, and it does so out of sight until capture fails or a fire risk builds. The make-up air side matters too: make-up air in kitchen ventilation only works if its own filters and ducts stay clear. Regular professional cleaning, with proper access panels along the run, is what keeps a basement or windowless kitchen breathing.
