UV and Ozone Canopy Systems: Are They Worth It?

UV and ozone canopy systems promise cleaner air and less grease - but installers often oversell them as a replacement for duct cleaning. Here is what they really do, where they fail, and whether they earn their place.

The call came in on a Monday, and the owner was not happy. Two summers earlier, a busy grill kitchen had a UV and ozone unit fitted into the canopy, and the installer had said the magic words - "you won't need to keep paying for duct cleaning."

Fast forward to a routine insurance survey. The assessor lifted an access panel on the horizontal run above the ceiling void and found a soft, tacky coat of grease lining the steel. A deposit test put the mean thickness well past the point where anyone would call the system clean. The policy renewal was flagged, a fire risk note went on file, and the "no more duct cleaning" promise suddenly looked very expensive.

UV and ozone canopy systems are not snake oil - the good ones do real, measurable work. But they get sold on a promise they cannot keep, and kitchens pay for it later. Here is what actually happened, why, and what we put right.

What these systems actually do

Strip away the marketing and there are two different technologies, often sold in one box.

UV-C lamps sit behind the canopy filters and flood the airstream with short-wave ultraviolet light. That light does two things - it cracks larger grease molecules through photolysis, and it generates a small amount of ozone. Ozone (O₂) is a highly reactive form of oxygen that oxidises the greasy, smelly organic compounds carried in the extract, breaking them down towards simpler products like carbon dioxide (CO₂) and water. The headline benefit is odour control, and it is genuine - reputable UK manufacturers cite figures around 85% odour reduction and roughly 75% grease reduction across the airstream when a unit is correctly sized, powered and maintained.

So far, so good. A well-specified system means a cleaner-smelling neighbourhood, a lighter load on any downstream carbon filter, and slower grease build-up in the ductwork. On a tight urban site with a planning condition on odour, that can be the difference between opening and not opening.

Read those first two numbers together and you can already see the trap. A 75% reduction is a reduction, not an elimination. The remaining grease still travels, still lands, and still builds - just more slowly. And the standard that governs your fire risk does not care how the grease got there.

What went wrong

Three things quietly stacked up in that grill kitchen, and they are the same three we see again and again.

The promise ignored the standard

Kitchen extract fire safety in the UK is governed by TR19® Grease, the specification published by the BESA. It sets a clear, physical benchmark - grease deposits should be kept below a mean average of 200 microns (about half the thickness of a business card) across the system, with 500 microns triggering spot cleaning and 1,000 microns treated as a serious fire risk. Crucially, the standard is about measured grease on the metal, not the technology fitted upstream. A UV system that removes three quarters of the grease simply means the duct crosses 200 microns later - not never. The obligation to inspect, test and clean to TR19® Grease never went away, and no installer can sign it away for you.

The system was fit-and-forget, so it faded

UV output falls as lamps age, and a lamp can still glow while delivering a fraction of its rated dose. Grease-blinded quartz sleeves, filters left in past their swap date, and a unit switched off during quiet shifts to "save energy" all quietly cut the real-world performance far below the brochure figure. Nobody was logging lamp hours or checking output, so the 75% became something much smaller - while everyone still believed the duct was protected.

There is a safety edge to this too. Ozone is a respiratory irritant, and HSE guidance treats it as a substance to be controlled, with concern levels around 0.2 ppm over short exposures. An ozone system that is poorly commissioned or interlocked incorrectly can push ozone into the kitchen or out of an unwashed exhaust, which is exactly why these units need proper control and monitoring rather than being left to run blind.

Nobody watched the interaction with the wider system

Ozone dosing, canopy airflow and the building's make-up air all pull against each other. Get the balance wrong and you either under-treat the odour or over-produce ozone. This is the same tug-of-war that decides whether smoke and steam actually leave the room, and it is worth understanding how smoke control and ventilation interact before you bolt another active device into the airstream. In this case, the extract had been rebalanced during a refit and nobody revisited the ozone dose, so the unit was working against a changed system.

The fix

We did not rip the UV and ozone system out. It was doing useful work on the odour side. What it needed was to be put back in its proper place - as a helper, not a substitute. Here is the order we worked in.

  1. Deep clean back to compliance first. We stripped and cleaned the canopy, filters, riser and the full accessible duct run to TR19® Grease, then issued a post-clean report with before-and-after deposit readings and photographs. That reset the clock and gave the insurer the evidence they wanted.
  2. Set a frequency from evidence, not from a brochure. TR19® Grease ties cleaning frequency to how hard the kitchen runs - broadly every three months for heavy use of twelve to sixteen hours a day, around every six months for moderate use. We took the UV system's genuine contribution into account, but we set the interval on measured grease accumulation, then let the real deposit readings confirm or stretch it.
  3. Put the UV and ozone unit on a maintenance regime. Lamp replacement on the manufacturer's schedule, quartz sleeves cleaned, filters swapped on time, and a simple log of lamp hours so performance is a fact rather than a hope.
  4. Recommissioned the ozone dose. With the extract rebalanced after the refit, the dose was reset to suit the actual airflow, and the interlocks checked so ozone cannot spill into the space or leave an untreated exhaust.
  5. Fitted access where it was missing. You cannot test or clean what you cannot reach. We added compliant access doors along the run so future inspections take minutes, not demolition.

So - are they worth it?

Yes, for the right kitchen, and for the right reason. If you have an odour problem, a planning condition, or nervous neighbours, a properly specified and maintained UV and ozone system earns its keep. It will slow grease build-up in your ductwork, ease the load on carbon filtration, and make the exhaust far less offensive at the point it leaves the building.

What it will not do is exempt you from TR19® Grease, cancel your insurer's expectations, or clean your ducts. Treat it as one layer in a fire-risk strategy - alongside good filtration, sound balancing and a real cleaning schedule - and it is a sensible investment. Treat it as a reason to stop cleaning, and it becomes the most expensive false economy in the building. The kitchens that get burned, sometimes literally, are the ones that believed the box on the wall was doing a job it was never designed to do.
