How to stress-test a kitchen before a big event

Every kitchen has a covers-per-hour ceiling. A timed test run finds it on a night you chose - and gives you ten days to fix what breaks instead of ten minutes.

What happens to this kitchen at double covers?

Every kitchen has a number - the covers-per-hour beyond which something gives. A wedding, a festival weekend or a televised match does not politely stop at that number. A stress test finds it in advance, on a night you chose, instead of the night that matters.

The honest way to answer the question is to run the event menu at event pace with the team you will actually have, and watch where the strain shows. Not a tasting, not a talk-through: a timed run at 60 to 80 per cent of expected event volume, with someone whose only job is holding a stopwatch and a clipboard. What you learn in two hours of that is worth more than any spreadsheet estimate of capacity - and the fixes are almost always cheap when you find them ten days out.

Booked a big one? If the canopy and filters have not been cleaned this cycle, get the extraction system cleaned before the event - it is the one bottleneck you cannot work around on the night.

The choke points

Where does the pass jam first?

Under load, kitchens fail at their narrowest point, and it is rarely the burners. Watch four places during your test run. The pass itself: can checks be called, plated and wiped at event pace, or do plates queue and die under the lamps? The fryer bank: recovery time between baskets stretches as oil temperature sags, and a two-minute recovery becomes the whole line's metronome. The wash-up: at double covers the plate return doubles too, and a blocked wash-up backs up into the pass within twenty minutes. And the walk-in door: if every dish requires a fetch, the fridge becomes a corridor bottleneck and its temperature climbs with every opening.

The classic fix is to move work off the peak, which is a prep question rather than a cooking one. Everything that can be portioned, par-cooked, sauced and staged before the doors open should be - the system we walk through in prep systems that survive a Saturday night rush. Your test run tells you which dishes refuse to be staged; those are the ones to cap, simplify or cut from the event menu.

Will the extraction and gas keep up?

Cooking capacity is not just hobs and ovens; it is the air above them. Your extraction system was sized for a design duty, and an event pushes it toward that ceiling for hours at a stretch. A system carrying a service-interval's worth of grease is already down a large slice of its design airflow before the first ticket prints - which shows up on the night as a hotter kitchen, lingering smoke, a struggling make-up air balance, and staff wilting an hour earlier than usual.

The gas side rides on the same system. The interlock that proves ventilation before allowing gas will do exactly its job at the worst moment if a strained fan trips or stalls mid-service, taking the entire cookline with it. Part of a proper stress test is simply running the full cookline at event duty for a sustained period and confirming the canopy captures cleanly, the fan holds, and the kitchen temperature stays workable. If it does not, the fix list is short: clean the system, check the filters, verify the make-up air path - in that order.

The dry run

What does a dry run actually prove?

A good test run produces three artefacts. First, times: ticket-to-pass for each event dish at load, which tells you the real spacing the menu can sustain. Second, a fault list: every jam, stock-out, fetch-run and equipment grumble, written down as it happens by your clipboard-holder. Third, decisions: dishes capped or cut, prep moved earlier, an extra body on wash-up, the fryer menu thinned, the extraction cleaned. Run the fixes, then - if the event is big enough to justify it - test once more. The second run is usually startlingly smoother, and the confidence it gives the brigade is worth as much as the timings.

One more lever sits outside the kitchen entirely: shape the demand before it arrives. For large private events, pre-orders or a reduced choice menu convert an unpredictable rush into a production schedule you can prep against. For open trading peaks, a covers cap per sitting or a staggered booking pattern does the same job. The organiser will usually agree to either if you raise it early - and your test run gives you the evidence for exactly what pace the kitchen can honestly promise.

How far ahead of the event should we run a stress test?

Ten to fourteen days is the sweet spot. Close enough that the menu, team and stock levels resemble the real night; far enough out to act on what you find - re-prepping the menu, adding a body to wash-up, capping a dish, or booking an extraction clean. Testing the night before finds the same problems with no time left to fix any of them.

We cannot afford a full mock service. What is the minimum useful test?

Time the three or four dishes that will dominate the event menu, cooked simultaneously at realistic batch sizes, while the fryers and wash-up run their expected load. Even ninety minutes of that reveals recovery times, pass jams and canopy performance. The one thing a cheap test cannot skip is sustained load - single dishes cooked in a quiet kitchen tell you nothing about the night.
