In a commercial kitchen every surface looks like the same stainless steel, but the grade underneath decides how well it survives salt, acid and daily cleaning. Here is how 304 and 316 differ, and where each one belongs.
Materials that matter
Not all stainless steel is equal, and in a working kitchen the grade under your hands decides how well a surface survives salt, acid, heat and daily cleaning.
Walk into any commercial kitchen and almost everything you touch is stainless steel - benches, splashbacks, sinks, shelving, the extraction canopy and the ductwork that carries grease and heat away. It all looks the same. It is not. The word "stainless" describes a family of alloys, and the differences between them show up exactly where a kitchen is hardest on metal: standing water, chloride-heavy cleaning chemicals, brines and marinades, and the constant swing between hot and cold.
Two grades do the heavy lifting in food environments, both austenitic and both referenced under the European standard EN 10088. Grade 304 (designation 1.4301, sometimes sold as 18/10 or 18/8) is the everyday workhorse. Grade 316 (designation 1.4401, with its low-carbon cousin 316L, 1.4404) is the upgrade built for aggressive conditions. There is also grade 430 (1.4016), a cheaper ferritic steel that is magnetic and far less corrosion-resistant - fine for a dry appliance panel, a poor choice anywhere wet or salty. This piece sets 304 against 316 so you can tell which one belongs where, and why paying attention to grade protects both your equipment and your hygiene standards.
One myth worth clearing up first: whether a magnet sticks tells you nothing useful about quality. Both 304 and 316 are largely non-magnetic, while budget 430 is magnetic - so a fridge magnet is a rough grade check, not a mark of the "best" steel.
Option A
Grade 304 is what most commercial kitchen kit is made from, and for good reason. Its blend of roughly 18% chromium and 8% nickel forms a self-repairing passive layer that shrugs off water, most foods and normal cleaning. For the average restaurant, cafe or bakery, it is more than enough steel for the job, and it keeps the cost of fitting out a kitchen sensible.

In practice, most of those weaknesses only bite when 304 is put somewhere it was never meant to be, or when cleaning is done carelessly. Rinse off chloride cleaners rather than letting them dry, avoid neat bleach on the metal, and 304 will give you many years of honest service.
Option B
Grade 316 looks identical to 304 but carries an extra ingredient that changes its behaviour: around 2% to 3% molybdenum. That small addition sharply improves resistance to chlorides - the salts that attack lesser steels - and to a broader range of acids and alkalis. It is the grade the British Stainless Steel Association and most fabricators point to whenever salt, acid, wet washdown or strong cleaning chemistry is in play.
Where 316 is worth the money
What it costs you
The honest position is that 316 is not "better" in the abstract - it is better for a specific set of conditions. A dry storage shelf gains nothing from it. A sink surround that is bleached down twice a day, or a brining table by the coast, gains a great deal. That same logic runs right through the extraction system: canopies and ductwork carry warm, greasy, moisture-laden air, and where surfaces stay clean and free of corrosion the whole system works better, which feeds directly into the wider indoor air quality of the building.

If you remember nothing else, remember that grade choice is about matching the steel to the conditions - salt, acid, moisture and how often the surface is cleaned. Get it right and corrosion never gets a foothold, which keeps surfaces genuinely hygienic rather than merely shiny.
Choose 304 for general benches, shelving, sinks and canopies. Step up to 316 wherever salt, acid or heavy washdown is routine, and for anything living inside a wet zone. Keep 430 for dry panels and decorative covers, never for wet or salty service. And whatever the grade, cleaning technique matters just as much: rinse chloride sanitisers off, do not let them dry, and never leave neat bleach sitting on the metal.

For most kitchens, grade 304 is the right choice - it resists corrosion well, cleans easily and costs less. Step up to grade 316 where conditions are harsher: heavy salt use, curing and brining, acidic processes, frequent aggressive washdown, or coastal locations where chloride-laden air attacks lesser steels. The rule is to match the grade to the conditions rather than assuming dearer always means better.
Those spots are usually chloride pitting or tea staining, and they most often appear on grade 304 rather than 316. The common causes are salt exposure and chlorine-based sanitisers or neat bleach left to dry on the surface, which break down the steel's protective passive layer. Rinsing cleaners off thoroughly, avoiding neat bleach and, in high-salt areas, specifying 316 will prevent it.
You cannot reliably tell 304 from 316 by eye, as they look identical. A magnet is only a rough guide - it will stick to cheaper magnetic 430 but not distinguish the two austenitic grades, which are both largely non-magnetic. The dependable route is the manufacturer's certification or material markings, and where that is missing a specialist can test or inspect surfaces during a deep clean.
