The detail
A fan spinning tells you the system is moving some air. It does not tell you the air is being captured, filtered and carried away properly. When grease loads the baffle filters and duct, airflow falls, capture weakens, and more of the odour-laden plume escapes into the room before the extract ever gets hold of it.
Heat makes it worse. Once the exhaust runs hot - above roughly 55 degrees - grease filtration is more likely to fail and let particulate bypass downstream. A greasy, hot system therefore loses smoke and odour control at the same time as it loses airflow, which is why a tired extract smells as well as spills heat.
Odour-control stages depend on contact time. Activated carbon needs a brief but real contact with the airstream, and UV or ozone systems need seconds of dwell to work. Carbon also preferentially adsorbs water, so a humid, steamy exhaust from a struggling system saps the very capacity meant to remove the smell.
So a kitchen that smells with the fan on is usually a kitchen where grease has degraded both the airflow and the treatment. The fix is not a stronger air freshener - it is restoring the filtration and airflow the system was designed to deliver.
What it means for you
Cleaning the baffle filters, plenum and duct brings airflow back up so the plume is captured at source rather than drifting. It also drops the exhaust temperature back toward its design range, which keeps particulate filtration working and protects any downstream odour stage from being swamped by grease it was never meant to catch.
Where UV or carbon odour control is fitted, a clean matters even more - UV lamps and carbon only work on clean, treatable air, and any ozone or contact time spent on stray grease is not spent on the odour molecules it was installed for.
