The used market is where a lot of catering businesses find their first oven, their spare fryer or a replacement combi when the budget is tight. There is nothing wrong with that. Some of the best-built commercial equipment outlives two or three owners without complaint, and buying pre-owned is often the sensible, frugal choice. The trouble is that a stainless steel shell hides a great deal, and a seller keen to move a unit on will rarely volunteer what is wrong with it. What follows is a plain, ordered way to check a piece of kit before you commit, so the saving stays a saving and does not turn into a call-out, a condemnation notice or worse.

The headline danger with second-hand catering equipment is not that it looks tired. It is that it can be quietly dangerous in ways the untrained eye never sees. Refrigeration deserves its own moment of caution. Chilled food must be kept at 8°C or below and hot food held at 63°C or above, and your Hazard Analysis and Critical Control Points plan will assume the equipment can deliver that day in, day out. A compressor on its last legs will pass a ten-minute demonstration and fail you a fortnight later, so ask to see it running from cold and ask when it was last serviced.
It is worth remembering who carries the risk once the money changes hands. Under the Health and Safety at Work etc. Act 1974 the duty to provide safe equipment sits with you as the employer, and the penalties for getting it wrong are not trivial - unlimited fines and, in serious cases, custodial sentences. That is the real reason to slow down and check. A used-kit disaster is rarely just a repair bill; it is often a fire, an insurance dispute and a business interruption rolled into one. Buying well is only half the job. The moment a second-hand unit lands in your kitchen it becomes part of a working system - the gas supply, the electrical circuits, the extraction canopy and the ductwork above it - and each of those needs to be brought up to a standard you can defend.
