A cheap fryer is only cheap on the day you buy it. Here is how to spot the difference between a fryer that lasts three years and one that lasts ten - before you sign anything.

The fryer was thirty-nine months old when it gave up. A single-tank gas model, bought because it was the cheapest unit that would fit the line, and it had cooked steadily through three winters of chip orders. Then the temperature stopped holding. It would climb, stall, and drift, and no amount of thermostat fiddling brought it back. The engineer's verdict was blunt: the burner was scaled and warped, the tank had thinned where the sediment sat, and the parts to fix it cost more than half the price of a new one.

That operator did nothing reckless. They cooked ordinary volumes, changed the oil on a sensible schedule, and wiped the unit down at close. What they didn't do was buy for longevity - and nobody had shown them where the difference actually lives on a spec sheet. A good commercial fryer should give you a decade of service. This one gave barely three. The gap between those two numbers is not luck, and it is not brand snobbery. It is a handful of decisions made at the point of purchase, most of which cost very little to get right.

What actually went wrong

Strip a failed fryer down and the same culprits appear again and again. None of them are dramatic. They are slow, quiet problems that a buyer never sees on the showroom floor.

The first was the tank steel. Cheaper fryers use thinner gauge or a lower grade of stainless, and the weakest point is always the base, where food debris and moisture settle into the cold zone below the burners.   1. Start with the tank. Ask what grade and gauge of stainless the frypot is made from, and whether it is a deep-drawn seamless pot or a welded box. A seamless or fully-welded tank in a proper stainless grade resists the fatigue and pitting that kill cheap units early. Run a hand along the base seam if you can - that is where failure starts.
  2. Insist on a real cold zone. A generous sediment area below the heat source lets crumbs sink out of the frying oil and char slowly instead of burning. It keeps your oil cleaner, which keeps the tank cleaner, which is a large part of why one fryer outlives another. No cold zone, or a token one, means faster oil breakdown and a harder life for the steel.
  3. Match capacity to your busiest hour, not your average one. A quality fryer will cook roughly twice its oil weight in food per hour, and it should recover from a batch of frozen product in about sixty to ninety seconds. If your peak demand pushes past that, buy a bigger tank or a second unit. An oversized fryer coasts and lasts; an undersized one runs flat out and burns through burners and oil alike.
  4. Choose gas or electric on your real conditions. Gas usually costs less per unit of energy in a UK kitchen and recovers heat quickly after a drop, which suits high-volume frying.
