Here is a scenario we see far too often. A busy site closes on Friday night. The walk-in is packed for the weekend - trays of prepped proteins, dairy, a full section of ready-to-eat items. The last person out does the usual sweep, ticks the fridge log on the clipboard by the door, and locks up. At some point over the weekend the unit trips. The air inside climbs slowly, then steadily, and by the time anyone returns the walk-in is sitting well above the legal limit. The paper log tells you nothing, because the paper log only knows what someone wrote on it, and no one was there to write.
The chef has to make a call with no information. How long has it been warm? Did it hit temperature at midnight or at ten this morning? Was anything above 8°C for two hours or for thirty? With no answers, the only defensible decision is to bin the lot. Thousands of pounds of stock into the waste, a scramble to re-order, and a very uncomfortable conversation when the environmental health officer next asks to see the records. That single gap in the log is the whole story, and it is exactly the gap that wireless temperature logging closes.
For decades, temperature control in a commercial kitchen meant a clipboard and a pen. Someone reads the dial or the probe, writes a number in a box twice a day, and moves on. None of this replaces good habits. Staff still need to probe cooked and reheated food, still need to know the danger zone, and still need to act when an alarm sounds.
