A cruise ship galley is one of the most demanding kitchens in the world. It feeds several thousand people, several times a day, for a week or more with no chance to restock, from a cramped space that never stops, on a platform that moves. And it does all this in a closed environment where a single stomach bug can race through the whole ship.
The defining risk is containment. A modern cruise ship can carry around three thousand passengers, and a ferry packs a big crowd into a few hours at sea; in both, people share handrails, buffet tongs and washrooms in tight quarters, so a gastrointestinal illness like norovirus can spread with frightening speed. That is why the sector is watched so closely. Ships calling at United States ports are inspected under the CDC's Vessel Sanitation Program, scored out of 100 with 86 or above needed to pass, while UK and international vessels work to national food-hygiene law and carry a Ship Sanitation Certificate under the World Health Organization's health regulations.
The controls behind the buffet
Underneath it all, the galley runs the same food-safety disciplines as any serious kitchen, held to an unusually strict standard and heavily documented. Inspectors and the ship's own system look for current HACCP records, calibrated thermometers, cold and hot holding within range, cooling and reheating logs, raw and ready-to-eat food kept separate, everything labelled and date-marked, and chemicals stored well away from food. On a ship these are not just good practice; they are the difference between a healthy voyage and an outbreak that can confine passengers to their cabins.
The crew rules are tighter than on land, and deliberately so. Galley staff must report any symptoms of stomach illness immediately and are kept out of food areas until they have been clear for at least forty-eight hours, because one sick food handler can seed an outbreak across thousands of meals. When illness does start to climb, ships have a well-drilled response: enhanced surface disinfection and, tellingly, the closing of self-service, so the buffet everyone pictures becomes a served counter to take hands off the shared serving spoons.
Provisioning turns all this into a logistics feat. A galley has to load enough safe food for an entire voyage, store it correctly across ambient, chilled and frozen ranges in limited space, and manage stock rotation with no supermarket to top up mid-ocean. Add the motion of the sea, which makes hot oil and heavy pots genuinely hazardous, and the ordinary job of cooking becomes a tightly engineered operation where nothing is left to chance.
Buffets and the danger zone
So much of shipboard dining is buffet and long-counter service that temperature control becomes a central preoccupation. Food sitting out for hundreds of guests has to stay hot enough or cold enough to stay out of the danger zone from the first plate to the last, which is precisely the challenge of keeping food at temperature across a long service counter, multiplied across multiple restaurants and sittings a day. Get the holding right and the buffet is a pleasure; get it wrong and it becomes the fastest route to a shipful of unwell passengers.

A big ship is really a floating hotel, with a main galley, buffet kitchens, specialty restaurants and crew messes all cooking at once and all needing to be spotless.
