An old pub earns its living from atmosphere, and the quickest way to spoil that is a clumsy stainless flue nailed across a historic elevation.

The good news is that a busy grill and a protected building are not really in conflict. Most of the friction comes from treating ventilation as an afterthought - a fan and a duct chosen on the back of a fit-out, then squeezed through whatever wall is nearest the kitchen. Plan it the other way round, starting from the structure and the neighbours, and you can hit every safety and hygiene standard while leaving the character untouched. What follows is the order of work we use on listed and historically sensitive sites, so nothing irreversible happens before the right people have looked at it.

A sequence that protects both the building and the kitchen

  1. Survey the historic fabric before you draw a single duct run. Get a measured look at wall thicknesses, timber frames, chimney breasts and any concealed decorative plaster, because these decide where a duct can honestly go and where it cannot. On a listed building the aim is to route services through voids, redundant flues and existing openings so that nothing original is cut, drilled or lost. This early survey is also your evidence base if consent is later queried.
  2. Bring the conservation officer in early, not at the objection stage. New external flues, extract terminals and plant almost always need listed building consent, and street-facing elevations are the hardest to win.   3. Route the extract to respect the elevation. Wherever possible, take the duct up through an existing chimney stack or an internal void and terminate high and out of sight, rather than penetrating a visible wall. Reusing a redundant flue is often the single move that turns a refusal into an approval, because it adds nothing new to the skyline. Where a new penetration is unavoidable, keep it small, keep it to a secondary elevation, and match the finish to the surrounding stone or render.
  4. Size and specify for the cooking, not the fashion. Extract rates should follow the canopy and the appliance line under EN 16282 and DW/172, so the system actually captures the grease-laden air a heavy pub grill produces. Undersizing leaves smoke and heat in the room; oversizing wastes energy and pulls warmth straight out of the bar. Get the volume right first and the ducting can then be as compact and well-hidden as the fabric demands.
  5. Design out the noise and the odour at the same time.   6. Build in proper access for cleaning from day one. TR19 Grease requires access panels of sufficient number, size and quality that the whole run can be inspected and cleaned, and retrofitting them into a listed wall later is painful and destructive. Position removable panels at every bend and at sensible intervals along straight runs while the ceilings are open. This one decision decides whether the system can ever be kept compliant.
  7. Set a realistic cleaning frequency and record it. Agree the interval against the measured grease load rather than guesswork, and diarise it so it never slips. Why the standards and the heritage pull in the same direction

It is tempting to see conservation rules and fire-safety rules as opposing forces, one wanting the system invisible and the other wanting it accessible. In practice they reward the same discipline. TR19 Grease, the BESA specification issued in 2019 for managing fire risk from grease accumulation, expects the mean deposit across the system to stay below 200 microns, treats any single reading over 500 microns as needing immediate localised cleaning, and looks for post-clean verification down below the standard's clean threshold using a deposit thickness test. The legal weight sits behind this too. Under the Regulatory Reform (Fire Safety) Order 2005 the responsible person must manage the fire risk that grease in the extract represents, and insurers increasingly ask for evidence of compliant cleaning before they will pay out on a fire claim. For a heritage pub the stakes are higher than a modern unit, because what burns cannot be rebuilt. A grease fire that starts in a neglected duct does not respect a Grade listing, so the documentation you build up is as much a conservation measure as a compliance one.

There is a craft point in all of this. The best heritage installations are the ones you never notice - the flue you assume was always the chimney, the plant you cannot hear from the beer garden, the canopy that clears the grill without a whisper reaching the snug.
