Automatic detection is the whole point of a fixed suppression system - it acts without anyone present, sensing heat and firing on its own. That autonomy depends on its sensors reaching release temperature quickly. A fusible link is a small, calibrated component designed to part at a set heat almost as soon as a fire builds.
Grease coating that link changes the physics. A film of baked fat acts as insulation, so the link sees the fire's heat later and reaches its release point slower. The system still works, in the sense that it will eventually fire, but the seconds it loses are exactly the seconds an oil fire uses to establish itself.
The detection cable can fail worse. Grease and carbon build in the conduit and on the pulleys the cable runs over, and a gummed cable may not slacken even after a link has melted - so the trigger completes but the agent never releases. Manufacturers have patented mechanisms purely to defend against this, which tells you how real it is.
