On a food factory site, "deep clean" means two different things. The production line is cleaned one way; the cook rooms and canteen another. Knowing which is which matters.
Two meanings of one phrase
"Deep clean" means two very different things depending on which side of a food manufacturing site you are standing on. The production line is cleaned one way; the cook rooms, prep areas and staff catering are cleaned another.
Knowing which is which - and where a commercial kitchen specialist actually fits - saves a lot of confusion when a manufacturer asks for a deep clean. The two regimes sit side by side on the same site, doing genuinely different jobs, and using the wrong one on the wrong zone helps nobody.
The line
A production line is engineered to be cleaned in place. Clean-in-Place (CIP) circulates a pre-rinse, a caustic wash, an acid rinse and a sanitiser through closed tanks and pipework without dismantling anything, recording temperature, chemical concentration and time on every cycle; Clean-out-of-Place (COP) does the same for parts taken off and cleaned in a tank.
Under GFSI-benchmarked standards such as BRCGS Food Issue 9 and FSSC 22000, that cleaning has to be validated - proven to work - and then verified on a schedule, with hygienic equipment design (smooth welds, no dead legs, cleanable crevices) built in from the start. Dry-food lines may be dry-cleaned to keep moisture out. This is a documented, engineered discipline, not a periodic scrub.
The kitchen zones
But almost every manufacturing site also has areas that are exactly like a restaurant: development and cook kitchens, hot-fill or fry lines under canopies, and a staff canteen. These are open surfaces and grease-bearing extraction, and they are cleaned the ordinary way - manual deep cleaning of surfaces and equipment, and TR19 Grease cleaning of canopies, filters and duct with a certificate for insurance and fire safety.
A CIP rig will never clean a canopy; a kitchen crew will never validate a pasteuriser. The point is not that one is better - it is that they are different tools for different equipment, and both belong on the site.
Where a kitchen specialist fits
On a manufacturing site a commercial kitchen deep-clean and extraction specialist owns the kitchen-type zones - the canopies, extract ducting, cook lines, ovens and canteen - cleaning and certificating them to TR19 just as in any restaurant.
What that specialist does not do is run the line's sanitation programme: the CIP validation, the master sanitation schedule and the BRCGS evidence trail belong to the plant's technical team. A kitchen deep clean is the right tool for part of the site and the wrong tool for the rest - and matching the method to the zone is the whole point.
