Where the money leaks

The waste is rarely the equipment you would guess

When UK researchers metered fourteen pub-restaurant kitchens, catering swallowed 63 per cent of the whole building's electricity - and the biggest single slice was not the cookline. It was refrigeration, at roughly 41 per cent of the kitchen's daily draw.

The pattern repeats across the sector: the appliances that waste the most are the ones running when nobody is cooking. Fridges run all night, fryers idle between services, hot-holds warm empty wells, and a greased-up extract fan strains against ductwork it can no longer breathe through. Below is the audit list we would walk with any operator - no meters required for the first pass, just eyes and a schedule.

Refrigeration - the 24/7 load

  • Check every door seal with the paper test: a sheet trapped in the closed door should not pull out freely. Failed gaskets make the compressor run near-constantly.
  • Clean condensers on a schedule, not on failure. In the metering study above, servicing one neglected walk-in freezer cut its electricity use by 45 per cent.
  • Probe the actual cabinet temperature against the display. Over half the refrigeration units in that same study showed a temperature that did not match reality - which wastes energy when set too cold, and risks stock when reading too cold.
  • Look at siting: a fridge beside the fryer bank or under a heat-throwing canopy fights the cookline all day. Even half a metre of separation helps.
  • Empty, consolidate and switch off underused display and back-bar units overnight.

The cookline - paid to do nothing

  • Time your preheats. Kit switched on at 8am for a 12 noon service is the single most common habit-waste in busy kitchens.
  • Fryers idling between lunch and dinner still burn energy holding oil at temperature; in the metered sample they took 13 per cent of daily kitchen electricity. Drop them to a holding setpoint or off.
  • Bain maries and hot cupboards warming empty wells drew 9 per cent. Hot-holding only what service actually needs, at 63C and no hotter than required, trims it.
  • Match the appliance to the job: a full-size combi run for one tray, or an oversized fryer for a small menu, wastes energy every single cycle.

Air, water and the invisible loads

  • Inspect canopy filters and the visible duct run. Grease loading can strip 30 to 50 per cent of an extract system's design airflow, so the fan runs harder and longer for less air - and the kitchen heats up, which loads the refrigeration in turn.
  • Check the make-up air path. If replacement air cannot get in, the extract fan strains against negative pressure and every door in the building whistles.
  • Sweep for standby loads at close: chargers, heated displays, idle dishwashers holding tank temperature all night.
  • Run dish and glass washers on full racks only, and descale on schedule - scaled elements heat water slowly and expensively.

Making it stick

Behaviour first, kit second

The researchers behind the fourteen-kitchen study put potential savings from behaviour change at up to 70 per cent of the excess, with maintenance worth around 45 per cent - both far ahead of what new equipment alone delivers. A one-page switch-on / turn-down / switch-off schedule taped by the pass, owned by whoever opens and closes, captures most of it. New kit earns its place afterwards, once you know which loads are genuinely necessary and which were just habit.

When the walk-round produces its list, rank it by run-hours times fault severity rather than by cost of the fix. A failed seal on a unit that runs 24 hours a day outranks a preheat habit on an oven used twice a week, even though both are free to fix. In a typical UK restaurant the split lands at roughly 30 per cent of energy on cooking, 25 per cent on refrigeration and 20 per cent on ventilation - so the always-on loads deserve the first pass, the long-running ones the second, and the occasional kit last.

The extraction line deserves its own mention because it compounds.
