One cavity that roasts, steams and does both at once - which is why a combi oven is so easy to buy badly. Here is what each mode is for, how sizing and steam systems differ, and the water question that quietly decides how long it lasts.
A combi oven is the most versatile box on a modern cookline, and also the one most often bought on brand loyalty rather than fit. From one cavity it roasts, bakes, steams, poaches, proves and regenerates, which is exactly why choosing one badly is expensive: the wrong size, the wrong steam system or the wrong water supply turns a flagship purchase into a maintenance headache. Here is what a combi actually does, and the handful of decisions that decide whether it earns its place.
"Combi" is short for combination. The oven combines convected hot air with injected steam, and lets you run either alone or both together under close control of temperature and, crucially, humidity. That control is what makes a single cavity do the work of a convection oven, a steamer, a proving cabinet and a bain-marie - and why a combi has become the heart of so many commercial kitchens rather than a luxury bolt-on.
Understanding the three modes is most of understanding the oven.
Combination mode is the headline. By holding moisture in the cavity, a combi cooks a joint faster and more evenly than a dry oven, and with noticeably less weight loss - and on a meat-heavy menu that reduced shrinkage pays for the oven in yield alone. Most models add a core-temperature probe and programmable recipes, so a busy kitchen cooks to a target core temperature rather than to a clock. That is better for consistency, and it produces the kind of cooking record an environmental health officer is glad to see.
Combi capacity is measured in Gastronorm trays, not oven litres. The industry-standard tray is the GN 1/1 (roughly 530 x 325 mm), and ovens are sold by how many they hold - a 6-grid, a 10-grid, a 20-grid and larger. As a rough guide a 6-grid suits a kitchen turning out up to around 60 to 80 covers a service, with 10- and 20-grid models for higher volumes and banqueting.
Size to the busiest service you actually run, and to the tray format your prep and blast chiller already use, so trays move straight from oven to chiller without re-plating. Undersize it and the combi becomes the bottleneck on a Saturday night; oversize it and you heat an empty cavity all week. If you are not sure where your real ceiling sits, it is worth working out first how many covers your kitchen can realistically handle, because that number, not the brochure, sets the grid count you need.
How the oven makes steam is the choice that most affects running cost and maintenance. Boiler-based models heat a dedicated water tank to hold a constant, powerful steam supply - precise and consistent, and ideal for steam-heavy, high-volume cooking, but with more to maintain and more surface for limescale to attack. Boilerless models, sometimes called injection or spritzer systems, spray water onto the hot heat exchanger to raise steam on demand - simpler, usually more energy efficient and less scale-prone, and well suited to kitchens that mainly roast, finish and reheat rather than steam all day. Neither is better in the abstract; the right one follows your menu.
Whatever the badge on the front, the single biggest cause of premature combi failure is limescale - and limescale is a water problem, not an oven problem. Every time water flashes to steam it leaves its dissolved calcium and magnesium behind, and in hard-water areas, much of southern England included, that scale coats elements, boilers and probes within months. It is not only a reliability issue: as little as an eighth of an inch of scale on a heating surface can push energy use up by around a quarter, so a scaled oven costs more to run every day it survives.
The defences are unglamorous and non-negotiable. Feed the oven softened or filtered water to the manufacturer's hardness specification, run the automatic clean and descale cycles the machine asks for rather than when someone remembers, and keep the cavity, door seal and probe clean so grease and scale never bake on. A combi is also the workhorse behind a cook-chill operation, regenerating chilled food to core temperature at service - which only makes its reliability more critical, because when the combi is down, service is down.
A combi is only as good as the services behind it. Most commercial models are three-phase electric and draw serious power, so the incoming supply and isolation have to be sized before delivery, not after. They need a plumbed water feed, ideally softened or filtered, with the backflow protection the water regulations require, and a drain for condensate and wash water. And because combination cooking still throws heat and grease-laden vapour into the room, the oven has to sit under adequate extraction - drop a powerful combi under a tired canopy and you inherit a hot, greasy kitchen and a harder-working extract system. None of this is exotic, but it is where rushed installs come unstuck.
Strip away the touchscreens and the decision comes down to four questions: how many trays your busiest service needs, whether your menu is steam-led or roast-led, whether your site's power and water can feed the model you want, and how hard your water is. Answer those honestly and the shortlist narrows fast. The common mistake is buying the biggest or best-reviewed model and retro-fitting the kitchen around it; the combi should fit the operation, the utilities and the water, in that order. Get it right and one cavity quietly replaces a rack of single-purpose equipment. Get it wrong and you have bought an expensive oven that spends its life descaling.
