The right type of product, at the right dilution and contact time, on a surface that is already clean. Here is how to pick and use kitchen chemicals safely - and where chemistry stops.
The short answer
Safe-around-food comes down to three things: the right type of product, used at the right dilution and contact time, on a surface that is already physically clean. Detergents clean but do not kill; disinfectants kill but only on a clean surface; sanitisers do both in two stages. For food-contact surfaces, look for BS EN 1276 or BS EN 13697 on the label.
Know the product
The Food Standards Agency draws a clear line between three kinds of product, and using the wrong one for the job is a common reason cleaning fails:
For any product used to disinfect a food-contact surface, the label should carry BS EN 1276 or BS EN 13697 - the hard-surface standards proving it kills to the required level. Note these are hard-surface tests; sanitising equipment submerged in water is a different standard again, so match the product to how you will actually use it.
Using it safely
A good chemical used badly is no safer than a bad one. Three things decide whether it works and stays safe around food. Dilution: mix to the manufacturer's ratio using a dosing system or measuring jug, never by eye - too weak and it fails, too strong and you risk tainting food and wasting product. Contact time: the surface must stay wet for the stated time, often between thirty seconds and five minutes; wiping it off early defeats the disinfection entirely. And taint control: unless the product is no-rinse, food-contact surfaces should be rinsed with clean water afterwards so no chemical transfers to food.
Store chemicals in their labelled original containers, away from food, and keep a safety data sheet for each. Bleach is discouraged on food-preparation surfaces. And under COSHH, staff must be trained to handle, dilute and store these products safely, with the right protective equipment - the chemical is a workplace hazard as well as a cleaning tool.
The limit
The right chemical is necessary but it is not sufficient. Chemistry alone cannot remove grease or penetrate biofilm - the surface has to be physically cleaned first, at the correct dilution and contact time, or the product is working over a barrier it cannot get through. And the wrong or misused chemical near food is a hazard in its own right. The chemical is one input of a method, not the method itself: cleaning is physical removal plus the right product used correctly, which is exactly what a proper deep clean brings to the load daily cleaning cannot shift.

BS EN 1276 is a British and European standard showing a disinfectant kills bacteria to a required level - 99.999% - on a hard surface within a set contact time. Along with BS EN 13697, it is the mark to look for on a product used to disinfect food-contact surfaces. It is a hard-surface test, so it is the right benchmark for worktops and equipment surfaces, though sanitising items submerged in water is covered by a different standard.
A detergent cleans - it removes grease and food soil - but does not kill microbes. A disinfectant kills bacteria and viruses but only works on a surface that is already visibly clean. A sanitiser does both, used as a two-stage clean: once to clean the surface, then re-applied to the clean surface to disinfect. Using a disinfectant over grease is a common mistake, because it cannot reach the bacteria underneath.
Contact time is how long the product must stay wet on the surface to kill bacteria to a safe level - often thirty seconds to five minutes depending on the product. Spraying and immediately wiping it off cuts that time short and leaves the surface effectively undisinfected. Letting it dwell for the stated time, ideally air-drying, is what makes the disinfection actually work, so it is worth timing rather than guessing.
Unless the product is specifically labelled no-rinse, food-contact surfaces should be rinsed with clean water after disinfecting so no chemical transfers to food and causes taint. Correct dilution matters here too - over-strength solutions increase the taint risk as well as wasting product. Always follow the manufacturer's instructions on whether and how to rinse, as it varies by product.
Bleach is a powerful disinfectant, but its use on food-preparation surfaces is generally discouraged - it is better suited to areas like drains, bins and waste areas. On food-contact surfaces, a product certified to BS EN 1276 or BS EN 13697 and used as a proper two-stage clean is the safer choice. Whatever you use, it must be handled under COSHH controls, stored in its labelled container away from food, and never mixed with other chemicals.
