On an offshore platform, the kitchen is not a convenience, it is life support. Oil and gas installations, floating production vessels, offshore wind platforms and remote land camps are self-contained industrial outposts where crews work long, physically hard shifts, often on two-week rotations, with no cafe down the road and no quick trip to a supplier. The galley has to feed them around the clock, keep morale up in isolation, and do it where a missing delivery cannot simply be reordered.
That isolation reframes everything. Everything has to travel an unbroken cold chain from mainland supplier to dockside to the asset itself, carried in heavy-duty refrigerated containers with continuous temperature logging that proves the journey stayed safe. The final leg, from a coastal port out to a live installation, is the hardest, coordinated between warehouse, vessel, crane and platform crew.
And it is at the mercy of the weather. Fog, heavy swell and gale-force winds can shut down resupply for days, forcing a supply vessel to wait out a storm or turn back. Because a platform cannot absorb a missed order, experienced offshore caterers hold safety-stock buffers on the asset itself, planning menus around what can be guaranteed rather than what was merely ordered. Waste management is just as constrained, since rubbish and food waste cannot simply be put out for collection and often has to be stored and shipped back to shore, which shapes how much is prepared in the first place.
Standards are formal and audited. Offshore catering runs to HACCP and ISO food-safety management, and the galley team is not a world apart from the operation: kitchen staff are trained in platform emergency procedures and form part of the installation's core emergency response team.
