The case for zoning your kitchen by cooking type

Mix the duties along one line and the whole kitchen inherits the fryers' output. Sort them into zones and the layout does the discipline - for grease, for raw food, and for the cleaning bill.

The kitchen where everything was next to everything

Picture a mid-sized kitchen that grew one appliance at a time: a fryer landed beside the salad station because that was where the socket was, the grill went under the shallowest run of canopy because the deep end was full, and raw prep happened on whichever bench was free. Nothing about it broke the law outright. Everything about it made the law harder to follow every single shift.

This is a composite of kitchens we clean every month, and the symptoms repeat like a rash. Salad garnish that tastes faintly of fryer. A film of grease on the cold pass. Cloths and hands ferrying invisible traffic between raw chicken and plated food because the two stations share a corridor of bench. One overworked stretch of extraction dripping while the rest of the canopy stays clean. And a cleaning schedule that has to treat every square metre as the worst square metre, because the mess is everywhere equally.

The diagnosis

Two kinds of contamination, one shared cause

Safety traffic

Food safety zoning is the familiar half: raw and ready-to-eat separated by distance, dedicated surfaces and equipment, and workflows that never make a chef choose between a long walk and a shortcut across the divide. The cross-contamination controls that matter for E. coli and its relatives are physical first and procedural second - separate areas and separate kit beat separate cloths and good intentions, because at 8pm on a Friday the shortcut always wins. A kitchen where raw prep sits beside the pass has built the shortcut into the floorplan.

Airborne grease

The less discussed half is what cooking type does to the air. Frying and grilling throw grease-laden vapour; steaming and boiling throw water; ovens throw dry heat. Mix the duties along one line and the whole canopy run inherits the fryers' output - grease condensing on the wet section's cooler surfaces, on shelving, on the cold pass, and through every metre of shared duct. Ventilation design guidance sizes canopies and airflow by the duty underneath them for exactly this reason. Scatter the heavy-grease kit and you guarantee the whole system works at the dirtiest duty's rate.

Zoning is not a bigger kitchen; it is the same kitchen sorted. Fryers and grills gang together under the deepest, hardest-working stretch of canopy, sized and cleaned for that duty. Steamers and boilers group where water vapour does least harm. Raw prep gets a bounded territory with its own kit and its own sink, positioned so its output flows toward cooking without ever crossing the ready-to-eat side. The pass and garnish live furthest from the grease and the raw traffic both.

The rezone

How the refit actually went

  1. Map the duties, not the appliances. The kitchen listed every station by what it throws into the air and what it risks on the bench: grease, steam, raw, ready-to-eat. The map made the argument by itself.
  2. Move the grease first. The fryer bank and grill consolidated under the deepest canopy section with the strongest extract - the single move that took grease off the salad pass and halved the area needing degreasing daily.
  3. Bound the raw territory. Raw prep took the bench run nearest goods-in, gained its own colour-coded kit and wash-down, and lost every excuse to visit the pass.
  4. Re-route the people. Workflow followed the food: goods-in to raw prep to cooking to pass, one direction, no doubling back - the discipline that also shortens service times, as we show in kitchen workflow design.
  5. Re-cut the cleaning schedule by zone. The high-grease zone went onto the heavy rota, the wet zone onto a mould-and-scale watch, and the ready-to-eat zone onto sanitiser-led cycles - each zone cleaned for what it actually is.

Total spend was days of disruption and some trades work, not a refit budget. The payoff

Cleaner air, shorter walks, honest schedules

Six weeks on, the composite kitchen's changes read as small and feel enormous. The salad station stopped tasting of fryer. The daily clean shrank because grease stopped travelling. The extraction contractor started cleaning one hard-working zone hard and certifying the rest on its true, lighter loading. And the EHO conversation about cross-contamination became a tour of the floorplan instead of a defence of the paperwork. Zoning, in the end, is the cheapest piece of equipment a kitchen can install: it is the layout doing the discipline so the people do not have to.

Frequently asked questions

Our kitchen is too small for four zones. Does zoning still apply?

Yes - zones are about separation of duty, not square metres. In a small kitchen the zones might be one bench each, or separated by time instead of space: raw prep finished and cleaned down before ready-to-eat assembly begins. The non-negotiables survive at any size: grease-throwing kit grouped under the strongest extraction, and raw never sharing surfaces, kit or unwashed hands with ready-to-eat.

Does zoning require moving gas and extraction?

Sometimes, and that is the expensive line - which is why you draw the duty map before spending anything. Often the grease-heavy kit can consolidate under the existing deepest canopy section without touching the gas runs, and the rest of the rezone is benches, kit and workflow. Where a gas or duct move is unavoidable, price it against what it removes: daily degreasing area, cross-contamination risk and an extraction system working beyond its duty.

How does zoning change the extraction cleaning schedule?

It makes the schedule honest. With mixed duties, every metre of canopy and duct has to be treated as heavy-use because the fryers' grease travels everywhere. Zoned, the high-grease stretch is cleaned on the heavy interval it genuinely needs, while the wet and light sections are cleaned and certificated on their true loading - the same TR19 evidence, better targeted spend.
